Eaux-de-vie

Waters of Life. Dry, colourless fruit brandies made from fruit other than grapes. They contain no added sweeteners.

Eiswein (Icewine)

Wine made from grapes that have been picked and pressed while frozen. As the water content of the grape is removed (in the form of ice), the sugar and acidity in the grape becomes very concentrated.

Encepage

French term referring to the blend of grape varieties in a wine.

Enology (Oenology)

The science of wine, from the grape seed to the finished bottled wine. Also called vitiviniculture.

Esters

One of the congeners, an organic compound contributing to the flavour of a spirit. Fruity odours are mostly esters.

Estufagem

Process for cooking madeira to duplicate the taste originally present in wines shipped across the equator.

Ethyl Alcohol

Best known and principal alcohol found in all alcoholic beverages. Also known as ethanol.
