Tomato-based stew with Spanish flair. Flavourful with smoked paprika.

INGREDIENTS

lb (900 g)
albacore tuna, cut into 2-in (5 cm) chunks

tbsp (30 ml)
olive oil

garlic cloves, chopped
1
onion, thinly sliced
2
red peppers, sliced

oz (840 ml)
can of San Marzano (plum) tomatoes

tsp (10 ml)
smoked paprika

nugget potatoes, halved
1
cup (250 ml)
white wine
1/2
cup (130 ml)
chicken stock
1
salt and pepper to taste

DIRECTIONS

  1. Heat oil in a heavy bottomed pot, add garlic and onion and cook for 5 to 10 minutes being careful not to burn. Add all other ingredients (except for tuna) and cook covered for 20 minutes, stirring occasionally. When potatoes are cooked, add tuna and cover for 10 minutes or until tuna is cooked through. Let rest 5 to10 minutes and serve.
