Baked Halibut

tri-coloured peppers, cubed

tomato, seeded and julienne

small, white nugget potatoes

piece of halibut

olive oil

marinated olives, pitted

lemon wedge

tsp (0 ml)
garlic, minced
1/4
cup (60 ml)
white wine
DIRECTIONS
- Pre-heat oven to 375 F (190 C).
- Parboil potatoes in salted water until tender.
- When cool, cut into halves and set aside in a gratin dish.
- In a pan on the stovetop, heat olive oil on high.
- Salt the halibut and sear the presentation side until golden.
- Turn and sear other side.
- Remove from pan and set on top of potatoes.
- Add vegetables and olives to pan and sauté. Add garlic.
- Remove from heat, allow to cool slightly, then pour the vegetable mixture over the top of the halibut.
- Add white wine to pan to deglaze. Reduce.
- Remove from heat and mix in butter.
- Pour wine/butter mixture over vegetables.
- Squeeze lemon wedge over dish.
- Bake for 5 minutes and serve.
