Baked Halibut

INGREDIENTS

tbsp (20 ml)
butter
1
cup (250 ml)
tri-coloured peppers, cubed
1/2
tomato, seeded and julienne
2
small, white nugget potatoes

pn
salt to taste
6
oz (180 ml)
piece of halibut
1
tbsp (20 ml)
olive oil
6
marinated olives, pitted
1
lemon wedge
1/4
tsp (0 ml)
garlic, minced
1/4
cup (60 ml)
white wine

DIRECTIONS

  1. Pre-heat oven to 375 F (190 C).
  2. Parboil potatoes in salted water until tender.
  3. When cool, cut into halves and set aside in a gratin dish.
  4. In a pan on the stovetop, heat olive oil on high.
  5. Salt the halibut and sear the presentation side until golden.
  6. Turn and sear other side.
  7. Remove from pan and set on top of potatoes.
  8. Add vegetables and olives to pan and sauté. Add garlic.
  9. Remove from heat, allow to cool slightly, then pour the vegetable mixture over the top of the halibut.
  10. Add white wine to pan to deglaze. Reduce.
  11. Remove from heat and mix in butter.
  12. Pour wine/butter mixture over vegetables.
  13. Squeeze lemon wedge over dish.
  14. Bake for 5 minutes and serve.
