Beet Carpaccio

extra virgin olive oil

large gold-coloured beet

large red-coloured beet

DIRECTIONS

  1. Trim beets leaving the root intact.
  2. Place in a large pot of water and bring to a boil.
  3. Reduce heat to medium and gently boil beets until tender but still slightly firm when pierced with a skewer.
