pureed carrots (approx. 3 carrots)

single-serve tart shells, pre-baked

whipping cream

DIRECTIONS

  1. Combine pureed carrots with cream, egg yolk, sugar and spices in a bowl. Stir to blend.
  2. Beat egg white and gently fold into carrot puree.
  3. Spoon into baked tart shells.
  4. Combine streusel topping ingredients and sprinkle evenly over filled tarts.
  5. Place on a baking sheet and bake in a 375F (190C) oven for 15 to 20 minutes or until firm.
  6. Serve with sweetened whipped cream.
