BEET-CURED STEELHEAD TROUT ON DARK RYE

Ingredients

Serves 6 open faced sandwiches
¾ cup (175 ml) granulated sugar
½ cup (125 ml) kosher salt
½ tsp (2 ml) freshly ground black pepper
2 tbsp (30 ml) chopped fresh dill
½ tsp (2 ml) lemon zest
1½ lbs (750 g) steelhead trout fillet, scaled, pin-bones removed, skin left on
3 tbsp (45 ml) vodka
1 large red beet, peeled and grated
¼ cup (60 ml) Greek yogurt
3 tbsp (45 ml) mayonnaise
3 tbsp (45 ml) chopped fresh dill, plus extra for garnish
2 tsp (10 ml) fresh lemon juice
1 tsp (5 ml) chopped capers
1 tbsp (15 ml) finely chopped red onion
salt and freshly ground black pepper, to taste
6 pieces dark rye or Pumpernickel bread, toasted
2 tbsp (30 ml) salted butter
½ English cucumber, thinly sliced into rounds
½ yellow zucchini or yellow beet, thinly sliced into rounds
3 radishes, trimmed and thinly sliced

Instructions

  1. Line dish large enough to hold trout fillet with a double layer of aluminum foil and a layer of plastic wrap. In a bowl, stir together sugar, salt, pepper, dill and lemon zest. Scatter half the sugar mixture in a fat line down centre of prepared dish. Place trout fillet on top, skin-side down and sprinkle with vodka before covering with remaining sugar mixture. Place grated beet on top of sugared flesh side of fish. Wrap tightly with plastic wrap trout is sitting on and allow to cure in refrigerator for 2 days, flipping fish over after 24 hours. Unwrap fish, rinse off beet and sugar mixture under cold water and pat dry with paper towel. Slice fillet very thinly across fish on the bias, taking care to leave behind skin. Fan out on plate, wrap with plastic wrap and refrigerate until ready to use.
  2. In a bowl, whisk together yogurt, mayonnaise, dill, lemon juice, capers and red onion. Season to taste with salt and pepper. Refrigerate until ready to use.
  3. Just before ready to serve, spread bread with butter and then some lemondill sauce. Divide cucumber, zucchini and radishes equally among bread slices. Top with trout and garnish with dill sprigs, if desired. Serve immediately.

BUBBLY BEER MACARONI AND CHEESE

Ingredients

Serves 4
1 tsp (5 ml) butter
½ medium onion, finely chopped
2 garlic cloves, minced
1 tsp (5 ml) dry mustard
1 tbsp (15 ml) salt
½ tsp (2 ml) black pepper
¼ cup (60 ml) stout or porter beer
½ cup (125 ml) whipping cream
½ cup (125 ml) whole milk
1 cup (250 ml) cream cheese
1 cup (250 ml) shredded mozzarella cheese
½ cup (125 ml) shredded aged cheddar cheese
2 cups (500 ml) dry elbow macaroni

Instructions

  1. Preheat oven to 375 F (190 C).
  2. In a medium saucepan, melt butter over medium heat, add onion and garlic and sauté until soft. Add dry mustard, salt and pepper and stir in to blend.
  3. Add beer and bring to a boil over high heat. Turn down heat to medium and simmer for about 5 minutes. Add cream, milk and cream cheese and stir until melted.
  4. Mix mozzarella and cheddar cheese together. Add ¾ of cheese mixture to pot and stir until just melted. Set remaining cheese aside.
  5. Meanwhile, add macaroni to a large pot of boiling salted water and cook according to package instructions. Thoroughly drain macaroni once cooked and add to cheese sauce. Fold in to evenly blend.
  6. Spoon into 4 individual greased ovenproof baking dishes large enough to contain macaroni and cheese. Sprinkle with remaining cheese.
  7. Bake in preheated oven for about 15 minutes, or until cheese is melted and sauce bubbles.

CARROT SOUP WITH CRISPY ONIONS, FETA CHEESE AND TOASTED HAZELNUTS

Ingredients

Serves 4
CRISPY ONIONS
½ cup (125 ml) vegetable oil
½ large yellow cooking onion, thinly sliced
3 tbsp (45 ml) cornstarch
SOUP
1 lb (500 g) carrots, peeled and sliced, about 4 cups (1 L)
½ large yellow cooking onion, chopped
3 garlic cloves, peeled and chopped
3 tbsp (45 ml) extra-virgin olive oil
2 tbsp (30 ml) salt
1 tsp (5 ml) freshly ground black pepper
3 cups (750 ml) vegetable stock or water
1 tsp (5 ml) champagne vinegar
tbsp (60 ml) Crispy Onions for garnish
4 tbsp (60 ml) Macedonian feta cheese, crumbled
2 tbsp (30 ml) hazelnuts, toasted and crushed

Instructions

  1. To make Crispy Onions, preheat vegetable oil in a medium-sized heavy saucepan until it reads to 300 F (150 C) on a candy thermometer.
  2. In a bowl, toss together onions and cornstarch until onions are evenly coated, shaking off the excess cornstarch. Fry in hot oil, stirring constantly until onions are golden brown, about 3 minutes. Remove from heat and drain onions on a paper towellined plate. Set aside while preparing soup.
  3. To make Soup, combine carrots, onion, garlic and olive oil in a large, heavy-bottomed saucepan. Sauté over medium heat until softened. Add salt, pepper and vegetable stock and bring to a boil. Cover and simmer for about 30 minutes, or until carrots are very tender.
  4. Purée soup using an immersion blender or place in a blender in batches. Do not overfill blender or lid may pop off while blending. Once puréed, add the champagne vinegar and blend until smooth.
  5. Spoon into bowls and sprinkle Crispy Onions, feta and hazelnuts over soup.

APPLE TARTE TATIN

Ingredients

Serves 4
1 cup (250 ml) granulated sugar
2 tbsp (30 ml) water
2 tbsp (30 ml) butter, plus extra for greasing ramekins
4 Granny Smith apples, peeled, cored and cut into quarters
1 cinnamon stick, broken
½ x 1 lb (500 g) frozen puff pastry, thawed
vanilla ice cream, for garnish
fresh mint sprigs, for garnish

Instructions

  1. Preheat oven to 375 F (190 C). Grease 4 x ¾ cup (175 ml) ramekins. Place on a baking sheet and set aside.
  2. Combine sugar and water in a medium, heavy-bottomed saucepan. Stir over medium heat until sugar is dissolved. Then continue simmering over medium heat until it begins to turn amber in colour. Immediately remove from the heat and pour enough caramelized sugar in the bottom of each ramekin to lightly coat.
  3. Keeping remaining caramelized sugar in saucepan, deglaze pan with butter. Add apples and broken cinnamon stick. Stir over medium heat and cook apples until almost tender and have started to release their juices, about 10 to 15 minutes. Apples should be coated in syrup. Divide apple mixture among ramekins and press slices in so they are flush with tops of ramekins. Set aside.
  4. Meanwhile, roll out pastry on a lightly floured surface into an 8 x 10-in (20 x 25 cm) rectangle about ¼-in (0.5 cm) thick. Cut into rounds using pastry cutter the diameter size of ramekins. If you don’t have a pastry cutter, use a small bowl to cut puff pastry. Place puff pastry rounds over each individual ramekin and slightly press into apples. Make several slits in pastry to allow steam to escape while baking.
  5. Bake for approximately 15 to 20 minutes, until pastry is golden and apples have started to bubble. Remove ramekins and cool on a rack for 20 to 30 minutes.
  6. To serve, run a knife around outside edge of ramekins. Carefully place dessert plate over ramekin, making sure it is pressed tightly to the plate to contain the juices. Use oven mitts if ramekin is too hot to touch. Immediately invert plate and let ramekin sit upside-down on plate for a few minutes. Tap top and allow Tartin to release from ramekin. Repeat with remaining ramekins. Serve with a scoop of vanilla ice cream and garnish with mint.

½ head green cabbage, thinly sliced
½ head red cabbage, thinly sliced
2 carrots, peeled and julienned
¼ cup (60 ml) chopped parsley
4 green onions, thinly sliced
3 tbsp (45 ml) cider vinegar
2 tbsp (30 ml) mayonnaise
2 tsp (10 ml) kosher salt
¼ tsp (1 ml) ground black pepper
1 pinch granulated sugar

Instructions

  1. Combine all ingredients in a large bowl. Gently toss together to blend. Cover and refrigerate for 1 hour before serving. Best served the same day it is made.

BEETROOT MOUSSE WITH SPRING VEGETABLE ESCABECHE

Ingredients

Serves
BEETROOT MOUSSE:
1 lb (500 g) + 1 red beets, divided
½ cup (125 ml) cold water
4 tsp (20 ml) unflavoured gelatin
2 tbsp (30 ml) unsalted butter
2 tbsp (30 ml) red wine vinegar
1 tbsp (15 ml) apple jelly
1¼ cup (300 ml) Beaujolais red wine
2 tbsp (30 ml) olive oil
½ cup (125 ml) finely grated Parmesan
3 tbsp (45 ml) prepared horseradish
salt and freshly ground black pepper, to taste
ESCABECHE:
⅔ cup (150 ml) grape seed or vegetable oil
⅓ cup (75 ml) white wine vinegar
1 garlic clove, crushed
1 fresh thyme sprig
1 medium golden beet or candy cane beet, thinly sliced
1 large watermelon radish, thinly sliced
1 medium turnip, thinly sliced
watercress or baby arugula, for garnish

Instructions

  1. Line a 9 x 5-in (2 L) loaf pan with a layer of plastic wrap, then a layer of parchment paper. Set aside.
  2. Place red beets in large saucepan and cover with 2-in (5 cm) cold water. Slowly bring to a boil over medium-high heat. Reduce heat to medium-low and simmer beets until tender and a knife pierces easily. Drain beets and set aside until cool enough to handle. Peel and roughly chop all but one red beet.
  3. In a small bowl sprinkle gelatin over ½ cup (125 ml) cold water and allow to bloom for 10 minutes.
  4. In a large frying pan, melt butter over medium heat. Add chopped beets, red wine vinegar and apple jelly and cook, stirring occasionally, for 2 minutes. Add red wine and simmer until reduced by half, about 8 to 10 minutes. Transfer mixture to blender along with gelatin and blend until smooth. Add olive oil, Parmesan and horseradish. Blend again until well incorporated and smooth. Season to taste with salt and pepper. Pour mixture into prepared pan and refrigerate until set, about 6 hours.
  5. To make ESCABECHE: In a saucepan over low heat, warm grape seed oil, white wine vinegar, garlic and thyme. Once warmed, stir in golden beet, radish and turnip slices. Remove from heat and allow to cool to room temperature. While waiting to cool, thinly slice remaining 1 red beet and rinse well under cold water. Add red beet slices along with a good pinch of salt and toss to coat all vegetables well in marinade.
  6. To serve, unmould mousse terrine with help of plastic wrap and slice into ½-in (1.25 cm) slices. Arrange on serving plates and garnish with some of the drained escabeche vegetables and a few pieces of watercress or arugula, if desired. Serve immediately.

ASPARAGUS RIBBON SALAD WITH FRESH BURRATA

Ingredients

Serves 6
1 tbsp (15 ml) unsalted butter
2 oz (60 g) shiitake mushrooms, thinly sliced
salt and pepper, for seasoning
½ lb (250 g) fresh asparagus, tough ends trimmed
½ small head frisée lettuce, outer leaves trimmed
½ small head radicchio, trimmed and leaves separated
4 assorted radishes, trimmed
¼ cup (60 ml) extra-virgin olive oil
2 tbsp (30 ml) fresh lemon juice
2 tsp (10 ml) minced fresh tarragon
1 tsp (5 ml) Dijon mustard
⅓ cup (75 ml) burrata cheese
¼ cup (60 ml) pine nuts, toasted

Instructions

  1. Melt butter in a heavy-bottomed frying pan. Add sliced shiitakes and sauté over medium heat until golden. Season with a little salt and pepper and set aside.
  2. Meanwhile, wash and blot dry trimmed asparagus spears. Working with 1 spear at a time, use a vegetable peeler to shave spears into long, thin ribbons. Transfer ribbons to a large bowl. Set aside.
  3. Wash and spin-dry trimmed frisée and separate into bite-sized leaves. Add to asparagus. Repeat with radicchio. Thinly shave radishes on a mandolin, or cut with a paring knife into paper-thin slices, then add to asparagus and greens.
  4. In a small bowl, combine oil, juice, tarragon and mustard. Whisk vigorously until blended. Add salt and pepper to taste.
  5. Gently toss asparagus and greens with cooled shiitakes in bowl. Place equal amounts on 4 individual serving plates. Using a small spoon, drop little bits of soft burrata cheese onto each serving and sprinkle with pine nuts. Give oil dressing a quick whisk and drizzle over top. Dust with fresh pepper to taste and serve.

BEEF BURGER

Ingredients

Serves 6
3 lbs (1.5 kg) ground beef
2 tsp (10 ml) fine sea salt
½ tsp (2 ml) freshly ground black pepper
2 tbsp (30 ml) Worcestershire sauce
6 slices, sharp cheddar cheese
12 slices, bacon, fried crisp
6 burger buns
lettuce leaves
FIG AND CARAMELIZED ONION JAM:
1 tbsp (15 ml) vegetable oil
4 medium yellow onions, thinly sliced
1 pint fresh figs, stems removed and halved
1 cup (250 ml) dry red wine

Instructions

  1. Preheat grill top or gas barbecue to medium-high heat. Mix together beef, salt, pepper and Worcestershire sauce. Divide and shape the burger patties into 6 equal portions making an indentation in the center of each patty with your thumb to prevent the patties from puffing on the grill.
  2. Lightly grease the grill rack. Add the patties and cook, turning once, until cooked to desired doneness. During the last minute of grilling, place a slice of cheese on each patty and toast the buns, cut side down.
  3. Add lettuce to the bun bottom. Place the burgers on the lettuce and top with a couple slices of bacon and 2 to 3 tbsp (30 to 45 ml) Fig and Caramelized Onion Jam. Serve immediately.
  4. To make FIG AND CARAMELIZED ONION JAM: Heat vegetable oil in a large saucepan over high heat. Add the onions stirring continuously. As soon as they begin to brown, reduce the heat to low. Cover and cook for 10 minutes, stirring every 2 minutes or so. Remove the lid and continue to cook until the onions are caramelized, about 30 minutes, stirring every 5 minutes or so.
  5. Add figs, red wine and simmer over medium heat until all the wine is absorbed and the figs and onions are cooked into a thick jam.

BACON AND CHIVE SCONES

Ingredients

1 tbsp (15 ml) grapeseed oil
6 strips bacon, finely chopped
¾ cup (175 ml) finely chopped onion
2 tsp (10 ml) poppy seeds
1 tbsp (15 ml) sunflower seeds
1 tbsp (15 ml) pumpkin seeds
1 cup (250 ml) whole milk, plus extra
2 tbsp (30 ml) finely chopped fresh chives
2 cups (500 ml) all purpose flour, plus extra
1 tbsp (15 ml) baking powder
½ tsp (2 ml) salt
2 tsp (10 ml) granulated sugar
2 tbsp (30 ml) unsalted butter, cold
ORANGE CHÈVRE SPREAD:
10 oz (300 g) fresh goat’s cheese, at room temperature
2 tbsp (30 ml) sour cream
1 orange, zest and juice only
1 tbsp (15 ml) clover honey
salt and pepper, to taste

  1. Preheat oven to 425 F (220C). Line a baking tray with parchment paper and set aside.
  2. Heat oil in a frying pan over medium heat. Add bacon and cook, stirring often, until crispy, about 2 minutes. Add onion and cook, stirring, until soft. Transfer to a paper towellined plate and set aside to cool for 5 minutes.
  3. In a small bowl, combine poppy, sunflower and pumpkin seeds. Set aside.
  4. In a medium bowl, stir together milk, chives and bacon mixture until combined. Set aside.
  5. Place flour, baking powder, salt and sugar in a large bowl. Using your fingertips, rub butter into flour mixture until it resembles breadcrumbs.
  6. Make a well in centre of flour mixture and add milk mixture. Use a butter knife in a cutting motion to mix until just combined. Turn dough out onto a floured surface and bring together with your hands. Knead once or twice, then shape into a 1-inch (2.5 cm) thick disk. Use a 2-inch (5 cm) round cookie cutter dipped in flour to cut out scones. Place scones on prepared baking tray so they are just touching. Brush lightly with extra milk and sprinkle with seed mixture.
  7. Bake until scones are risen and golden brown, about 15 to 18 minutes. Transfer to a wire rack to cool slightly before serving. Scones are best eaten warm or at room temperature the day they are made. Serve with Orange Chèvre Spread, if desired.
  8. To make ORANGE CHÈVRE SPREAD: In a medium bowl, stir together goat’s cheese and sour cream with a rubber spatula or wooden spoon until well combined. Stir in orange zest and juice and honey. Add salt and pepper to taste. Refrigerate for at least 1 hour before serving. Makes 1½ cup (375 ml)

BUTTERNUT SQUASH AND PECAN-STUFFED TURKEY

Ingredients

Serves 8
2 tbsp (30 ml) grapeseed or coconut oil
¾ cup (175 ml) diced yellow onion
1 large egg
¼ cup (60 ml) whole milk
2 thick slices whole wheat bread, cut into ¼-in (0.5 cm) cubes
1 ⅓ cups (425 ml) grated butternut squash
⅓ cup (75 ml) pecan halves, chopped
5 oz (140 g) mozzarella cheese, cut into ¼-in (0.5 cm) cubes
1 tsp (5 ml) each finely chopped fresh thyme, sage and marjoram
¼ tsp (1 ml) ground black pepper, plus extra
salt, to taste
2 lb (1 kg) boneless, skinless turkey breast
16 thin slices of prosciutto

Instructions

  1. Preheat oven to 375 F (190 C). In a frying pan heat oil over medium heat. Add onion and sauté until soft, 5 minutes. Remove pan from heat and cool.
  2. In a large bowl, whisk together egg with milk. Stir in bread and allow to sit, 5 minutes. Stir in sautéed onion, squash, pecans, cheese, thyme, sage, marjoram and pepper.
  3. Slice turkey breast in half lengthwise, without cutting all the way through. Place a piece of plastic wrap on a clean work surface and lay turkey on top. Cover with another piece and flatten turkey with a butcher’s mallet or rolling pin, into a 1⁄2-in (1 cm) thick rectangle. Discard top piece of wrap before spreading stuffing along 1 long edge. Roll up stuffing in turkey.
  4. To wrap turkey roll in prosciutto, place a piece of tin foil longer than turkey roll on a clean work surface and lay approximately half the prosciutto slices vertically, long sides overlapping by 1⁄2-in (1 cm). Place turkey roll crosswise across prosciutto and roll up using tin foil to assist, snugly wrapping prosciutto around turkey. Lay extra prosciutto over any exposed bits. Wrap foil around turkey roll before tying with kitchen twine at even intervals. Place on rimmed baking tray, bake in centre of oven until thermometer reads 170 F (80 C) when inserted through foil into meat, 1 to 11⁄2 hours. Remove and rest pan on a cooling rack for 10 minutes. Remove foil and transfer roll to a cutting board. Cut into 3⁄4-in (2 cm) thick slices and serve with Cranberry Mostarda, if desired. Recipe follows.
