GRILLED CHICKEN WITH NECTARINE BARBECUE SAUCE
Ingredients
Serves 4 to 6
NECTARINE BARBECUE SAUCE:
½ yellow onion, chopped
1 garlic clove, chopped
1 tbsp (15 ml) vegetable oil
3 nectarines, pitted and chopped
½ cup (125 ml) spiced dark rum
½ cup (125 ml) liquid honey
½ cup (125 ml) tomato paste
¼ cup (60 ml) cider vinegar
2 tsp (10 ml) smoked paprika
4 tsp (20 ml) kosher salt
1 tsp (5 ml) grated nutmeg
½ tsp (2 ml) ground black pepper
BARBECUED CHICKEN:
4 chicken drumsticks, with skin on (optional)
4 chicken thighs, with skin on (optional)
2 tbsp (30 ml) olive oil
2 tbsp (30 ml) salt
2 tsp (10 ml) ground black pepper
2 lemons, cut in half
6 thyme sprigs
Instructions
- In a heavy-bottomed saucepan, sweat onions and garlic in vegetable oil until soft, about 5 minutes over low-medium heat.
- Add remaining barbecue sauce ingredients and simmer, uncovered, for 15 to 20 minutes. Stir often. Transfer to a food processor or blender and purée until smooth. Adjust seasoning to taste. Store in a tightly covered container in the refrigerator for up to 1 week. Makes 2¼ cups (560 ml).
- Grease grill and preheat barbecue to medium heat, about 350 F (180 C).
- In a large bowl, combine chicken, olive oil, salt and pepper. Rub in with your hands to evenly coat.
- Place chicken on greased grill and barbecue for about 7 minutes on each side.
- Generously brush chicken with Nectarine Barbecue Sauce. Continue flipping and basting chicken with sauce until juices run clear when pierced and internal temperature registers 165 F (75 C) on a meat thermometer when inserted into centre of meat, about 10 to 12 minutes more per side.
- Meanwhile, grill cut side of each lemon half and set aside for garnish.
- To serve, arrange chicken on a heated platter and garnish with grilled lemon and sprigs of thyme.

GARLICKY CHICKEN
Ingredients
Serves 6
3 lb (1.5 kg) chicken pieces, bone-in or boned and skinned
salt and freshly ground black pepper
2 thick strips bacon, diced
1 tbsp (15 ml) olive oil (optional)
40 garlic cloves, peeled
½ cup (125 ml) dry vermouth
½ cup (125 ml) dry white wine
½ cup (125 ml) chicken stock
1 tbsp (15 ml) tomato paste
2 tbsp (30 ml) slivered fresh tarragon leaves
assorted roasted vegetables (optional)

- Separate chicken legs at joints. If breasts are large, cut diagonally across each to make 2 portions. Remove skin if desired. Season with salt and freshly ground black pepper and set aside.
- Preheat oven to 350F (180C).In a large, deep, heavy-bottomed frying pan, cook bacon over medium-high heat until crisp and lightly golden. Remove to a paper towel-lined plate using a slotted spoon and set aside. If needed, add oil to bacon drippings in pan. When hot, add chicken pieces, a few at a time, careful not crowd pan. Cook pieces in hot oil, turning once, until golden brown, 15 minutes. Transfer to a 12 cup (3 L) roasting pan as they are done, arranging pieces in a single layer.
- Add garlic cloves to oil remaining in pan and cook, stirring occasionally, until browned in spots, about 5 minutes. Add vermouth to pan and deglaze, scraping bottom of pan. Cook over medium heat for 2 minutes or until slightly reduced. Add wine and stock and bring to a boil. Then remove pan from heat.
- Remove half the garlic from pan using a slotted spoon and scatter over browned chicken. In a bowl, mash remaining garlic cloves, or finely chop and return to stock with tomato paste. Stir to blend and pour mixture over chicken and bake uncovered until chicken is tender and meat registers 165 F (75 C) on a meat thermometer, about 35 minutes. Add salt and pepper to taste. Sprinkle with fresh tarragon and cooked bacon.
- For a thicker sauce, remove chicken to a separate dish and boil pan juices down in a saucepan until thickened as desired. Add salt and pepper to taste. Pour over chicken pieces and sprinkle with fresh tarragon and cooked bacon. Serve immediately with roasted vegetables on the side, if desired.

CHICKEN AND RICOTTA DUMPLING SOUP
Ingredients
Serves 6
SOUP
3 medium carrots, divided
3 celery stalks, divided
3 lb (1.5 kg) whole chicken, rinsed and patted dry
1 large cooking onion, unpeeled, quartered
2 bay leaves
5 sprigs fresh thyme
3 sprigs fresh parsley
1 head garlic, halved crosswise
10 black peppercorns
12 cups (3 L) water
1 leek, trimmed, white and light green part thinly sliced
PESTO
5 oz (140 g) kale, stems removed, blanched and squeezed dry
1 cup (250 ml) fresh basil leaves
⅓ cup (75 ml) pine nuts
½ cup (125 ml) finely grated Parmesan
½ cup (125 ml) extra-virgin olive oil
salt and freshly ground black pepper, to taste
DUMPLINGS
1½ cups (375 ml) ricotta cheese
⅔ cup (150 ml) finely grated Parmesan, plus extra for garnish
⅔ cup (150 ml) all-purpose flour
2 large eggs
salt and freshly ground black pepper
Instructions
- For Soup, peel and chop carrots and celery. Place whole chicken in a large, heavybottomed saucepan along with half the chopped carrots and celery. Add onion, bay leaves, thyme, parsley, garlic, peppercorns and water. Place pan over high heat and bring just to a boil. Reduce heat to medium and simmer stock, with lid ajar, for 1½ hours.
- To make Pesto, place blanched kale, basil, pine nuts, Parmesan, oil, salt and pepper in a food processor. Pulse until still slightly chunky, scraping down sides of processor as needed. Transfer to a container, cover with plastic wrap pressed directly onto pesto and set aside.
- To make Dumplings, in a medium bowl, stir together ricotta, Parmesan, flour, eggs, 1½ tbsp (22 ml) Pesto and a pinch of salt and pepper until a sticky dough forms. Cover bowl with plastic wrap and refrigerate until ready to use.
- Strain soup mixture, reserving stock and chicken. Return stock to a large, clean saucepan and bring to a boil over high heat. Chop chicken, discarding skin and bones. Set meat aside in a separate bowl. Add remaining chopped carrot, celery and leek to boiling stock. Reduce heat to medium. Drop tablespoons of dumpling mixture into soup and cook until vegetables are tender and dumplings float, about 8 minutes.
- To serve, divide reserved chicken among warmed bowls. Ladle over soup and top with a dollop of pesto and garnish with extra Parmesan, if desired. Serve immediately.

CHICKEN AND PORK SATAYS
Ingredients
Serves 4 to 6
3 tbsp (45 ml) canola oil
1 stalk lemongrass, dry leaves removed, coarsely chopped
3 garlic cloves
1 red Thai chili pepper, seeded and coarsely chopped
1 tbsp (15 ml) curry powder
1 tsp (5 ml) ground cumin
1 tsp (5 ml) ground coriander
1 tbsp (15 ml) light soy sauce
1 tbsp (15 ml) fish sauce
1 tsp (5 ml) palm or brown sugar
¼ cup (50 ml) coconut milk
1 to 1½ lbs (500 to 750 ml) combination of chicken breast, thighs or pork, cut into thin 1 x 3-in (2.5 x 7.5 cm) strips
SATAY SAUCE:
¼ cup (50 ml) canola oil
2 cloves garlic, minced
1 medium onion, chopped
½ tsp (2 ml) dried red chili flakes, or to taste
3 kaffir lime leaves or zest of 1 lime
½ tsp (2 ml) curry powder
1 tbsp (15 ml) chopped lemongrass
1½ cup (375 ml) coconut milk
1 x 2-in (5 cm) cinnamon stick
2 tsp (10 ml) tamarind paste
1 to 3 tbsp (15 to 45 ml) fish sauce, or to taste
3 tbsp (45 ml) palm or brown sugar
3 tbsp (45 ml) lemon juice
1 cup (250 ml) chunky peanut butter
Instructions
- Place all ingredients except for the meat into a food processor. Blend until smooth.
- Separate chicken and pork in two bowls and divide marinade and pour on top. Mix well to combine and marinate for 2 hours.
- Thread meat onto skewers and place on barbecue or grill, turning occasionally, until cooked.
- To make SATAY SAUCE: Heat canola oil in a saucepan over medium-high heat. Add garlic, onion, red chili flakes, kaffir lime leaves, curry powder and lemon grass.
- Sauté 2 to 3 minutes, or until fragrant and onions start to soften.
- Stir in remaining ingredients and mix well. Reduce heat and simmer, stirring frequently, until sauce thickens, about 30 minutes. Be careful sauce does not stick to bottom of saucepan. Makes 1½ cups (375 ml)

CHICKEN AND CASHEWS IN PINEAPPLE
Ingredients

2 tbsp (30 ml) red curry paste
½ cup (125 ml) coconut milk
¼ cup (60 ml) chicken stock
1½ tbsp (22 ml) fish sauce
2 tbsp (30 ml) palm or brown sugar
2 tbsp (30 ml) canola oil
1 tbsp (15 ml) finely chopped ginger
1 small cooking onion, cut into ½-in (1.25 cm) dice
2 green onions, cut into 1-in (2.5 cm) pieces
1 lb (500 g) skinless, boneless chicken thighs or breast, cut into 1-in pieces (2.5 cm)
½ cup (125 ml) toasted cashews
1 cup (250 ml) pineapple tidbits
½ cup or small bunch fresh Thai basil (or regular basil)
½ pineapple, hollowed out, optional

- Mix together red curry paste, coconut milk, chicken stock, fish sauce and palm or brown sugar.
- Heat oil in a wok or skillet over medium high heat. Add the ginger, onion and green onion and sauté until fragrant.
- Add chicken and sauté until cooked, about 8 to 10 minutes.
- Add curry mixture and stir well to combine. Bring to a boil, remove from heat and stir in cashews, pineapple and basil and cook until just warm and basil is wilted. Serve on a warm platter or a hollowed out pineapple half.

CHICKEN, JICAMA, PAPAYA AND PICKLED GINGER SALAD ROLLS
Ingredients
Serves 8
2 oz (60 g) dried bean vermicelli noodles
8 X 8-inch (20 cm) rice-paper rounds, plus more in case of tearing
3 to 4 romaine leaves, cored and finely shredded, about 2-inches (5 cm) long
¼ cup (60 ml) pickled ginger, dried and cut into fine julienne
1 ripe papaya, peeled, seeded and cut into fine julienne, 2-inches (5 cm) long
½ English cucumber, cored seeded and cut into ¼-inch (0.5 cm) matchstick
6 oz (180 g) peeled jicama root, cut into ¼-inch (0.5 cm) matchstick
handful cilantro sprigs, rinsed and dried well
handful basil leaves
½ cup (125 ml) shredded carrot
2 cups (500 ml) shredded rotisserie chicken meat
Instructions
- Bring a medium saucepan of water to a boil and add noodles. Cook until just tender, about 3 minutes. Drain in strainer and rinse under cold water. Drain well. Set aside.
- Place a clean tea towel or a double thickness of paper towel on a work surface. Fill a shallow baking pan with warm water. Soak a rice paper round in warm water until pliable, about 5 to 10 seconds. Carefully transfer to tea towel or paper towel lined work surface.
- Arrange alternating on the bias, the shredded romaine, julienned pickled ginger and papaya in a row across middle bottom third (the part nearest you).
- Spread a small amount of the noodles on top of the shredded ingredients and arrange a few cucumber and jicama matchsticks, a few cilantro sprigs, basil leaves, shredded carrots and chicken.
- Fold bottom of rice paper over filling and begin rolling up tightly, stopping at halfway point. Arrange a few more cilantro sprigs, then fold in ends and continue rolling.
- Transfer roll, seam side down, to a plate and cover with dampened paper towels. Repeat making 7 more rolls in the same manner and serve with Peanut Dipping Sauce or any other desired sauce.

CITRUS AND FENNEL CHICKEN BAKE
Ingredients
Serves 4
½ cup (125 ml) extra-virgin olive oil
1 Meyer lemon, zest and juice
1 orange, zest and juice
1 tbsp (15 ml) fennel seeds
4 tsp (20 ml) Dijon mustard
1 tbsp (15 ml) liquid honey
2 tsp (10 ml) fresh thyme leaves
2 medium fennel bulbs, trimmed and fronds reserved
8 skin-on, bone-in, chicken thighs
2 cups (500 ml) sugar snap peas
Instructions
- In a large bowl, whisk together oil, lemon and orange zest and juice, salt, fennel seeds, mustard, honey and thyme leaves. Remove 2 tbsp (30 ml) marinade and set aside.
- Cut fennel bulbs into quarters and then cut each lengthwise, into 3 wedges. Place in large bowl with marinade. Add chicken and toss together until well mixed. Tip into a large baking dish, oven-safe frying pan or rimmed baking tray. Arrange chicken so that it sits on top of fennel and allow dish to marinate while oven preheats.
- Preheat oven to 400 F (200 C). Toss reserved marinade with snap peas and set aside.
- Roast fennel and chicken for 35 minutes before scattering snap peas over top, then continue to roast until chicken is cooked through, about another 15 to 20 minutes. Garnish with reserved fennel fronds and serve while warm.

CHICKEN WITH PISTACHIO GREMOLATA
Ingredients
Serves 4
GRILLED CHICKEN:
1 lemon, zest and juice
¼ cup (60 ml) olive oil
2 garlic cloves, finely grated
1 tsp (5 ml) salt
1 pinch pepper
4 boneless chicken breasts, skin on
PISTACHIO GREMOLATA:
¼ cup (60 ml) flat-leaf parsley, finely chopped
10 mint leaves, finely chopped
10 basil leaves, finely chopped
½ garlic clove, finely grated
3 anchovies, packed in oil, finely chopped
1 tsp (5 ml) grainy mustard
2 tbsp (30 ml) champagne vinegar
2 tbsp (30 ml) olive oil
1 tsp (5 ml) liquid honey
2 tbsp (30 ml) toasted pistachios, roughly chopped
salt and freshly ground pepper, to taste
CREAMY CANNELLINI BEANS:
1 tsp (5 ml) olive oil
1 tsp (5 ml) butter
1 small leek, white part only, washed and thinly sliced
1 garlic clove, finely chopped
1 tsp (5 ml) salt
2 sprigs thyme
½ cup (125 ml) cherry tomatoes, halved
1 tsp (5 ml) champagne vinegar
3 tbsp (45 ml) white wine, such as Pinot Gris
1 x (398 ml) can cannellini beans, drained
Instructions
- To marinate chicken, in a large mixing bowl combine lemon, olive oil, garlic, salt and pepper. Add chicken and evenly coat in mixture. Cover and marinate overnight.
- Meanwhile, prepare PISTACHIO GREMOLATA: In a bowl, mix all ingredients together adding salt and pepper to taste. Cover and refrigerate.
- When ready to cook, bring chicken to almost room temperature, about 30 minutes before cooking. Brush barbecue grill with oil. Preheat grill to medium-high heat.
- While chicken is resting, prepare CREAMY CANNELLINI BEANS: Heat olive oil and butter in a medium-sized saucepan over medium heat. Add leek, garlic and salt and cook until leek has softened. Add thyme, cherry tomatoes, champagne vinegar, white wine and cannellini beans. Cover and cook for 15 to 20 minutes or until flavours have blended. Add salt and pepper to taste. Set aside and cover to keep warm.
- While beans are cooking, grill marinated chicken for 5 to 6 minutes on both sides, or until cooked through and juices run clear. Internal temperature should register 165 F (75 C) when tested with a meat thermometer.
- To serve, add a scoop of cannellini beans to a serving plate. Top with Grilled Chicken and Pistachio Gremolata. Serve alongside Grilled Asparagus with Modern Sauce Gribiche, if desired.

DUCK BREAST WITH RHUBARB
Ingredients
Serves 4
RICH DUCK SAUCE:
1 whole duck carcass
4 tsp (20 ml) unsalted butter
2 tsp (10 ml) olive oil
2 tbsp (30 ml) chopped button mushrooms
½ yellow onion, finely diced
½ celery stalk, finely diced
½ small carrot, peeled and finely diced
2 juniper berries
1 orange, zest only
2 tsp (10 ml) brandy
3 tbsp + 1 tsp (50 ml) port
4 cups (1 L) brown chicken stock
1 sprig fresh thyme
2 tbsp (30 ml) whipping cream
DUCK BREAST WITH VEGETABLES AND RHUBARB:
¼ cup (60 ml) granulated sugar
⅓ cup (90 ml) water
2 stalks rhubarb, cut into 2-in (5 cm) pieces
2 small red beets, peeled
3 carrots, peeled and cut in half, lengthwise
2 tsp (10 ml) unsalted butter
1 duck breast, boned, skin on
seasonal herbs, for garnish
Instructions
- To make RICH DUCK SAUCE: Chop duck carcass into small pieces. Place in a large, heavy saucepan with butter and fry over medium heat, stirring often, until golden brown, about 10 minutes. Add oil, mushrooms, onion, celery, carrot, juniper berries, orange zest, brandy and port and bring to a boil. Reduce heat to medium and simmer uncovered, until reduced by half.
- Add chicken stock and thyme sprig and bring to a boil. Reduce heat to medium and simmer for 30 minutes. Strain sauce and return to saucepan. Continue to simmer, uncovered, until sauce is at desired thickness, or coats the back of a spoon. Stir in cream and remove from heat. Strain with a fine mesh and cover to keep warm.
- To make DUCK BREAST WITH VEGETABLES AND RHUBARB: Combine sugar and water in a small saucepan. Bring to a boil and stir until sugar is dissolved. Remove from the heat and stir in rhubarb. Set aside and steep for 10 minutes in a low oven set at 200 F (93 C). Then strain rhubarb and reduce the sugar water until syrup. Pour the syrup over rhubarb and set aside.
- Preheat oven to 350 F (180 C). Place beets in a small roasting pan, cover and bake for 20-30 minutes. On a separate roasting sheet, rub carrots with butter and bake for 7 minutes.
- Meanwhile, place duck breast fat-side down in a cold, dry, ovenproof frying pan. Sear duck skin over medium heat for 6 to 8 minutes or until skin is golden brown. Drain off rendered fat and save for another use, if desired. Turn breast and sear other side for 30 seconds. Turn breast fat side down again and place pan in preheated oven. Roast for 6 to 8 minutes or until breast is medium rare. Remove from pan and let rest for 5 minutes before serving.
- To serve, thinly slice duck breast. Place a couple slices on a heated serving plate alongside a couple wedges of roasted beets, a couple pieces roasted carrot and a generous spoon of poached rhubarb. Drizzle with a generous ladle of Rich Duck Sauce and garnish with seasonal herbs.

CHEESED TURKEY BURGER WITH APPLE-CURRANT GINGER CHUTNEY
Ingredients
Serves 8
8 oz (250 ml) fine grated Parmesan cheese
1½ cups (375 ml) shredded Mexican cheese blend
2 garlic clove, minced
1 medium onion, finely chopped
¼ cup (60 ml) old-fashioned oats
2 lg eggs, lightly beaten
1 tsp (5 ml) dried oregano
1 tbsp (15 ml) Worcestershire sauce
1 tsp (5 ml) salt
2 lbs (1 kg) lean ground turkey
8 thin sliced smoked gouda
8 cheese hamburger buns or your choice of bun
lettuce leaves
1 red onion, thinly sliced
HONEY MUSTARD SAUCE:
¼ cup (60 ml) mayonnaise
¼ cup (60 ml) Dijon mustard
3 tbsp (45 ml) honey
¼ tsp (1 ml) cayenne pepper
2 tsp (10 ml) cider or white vinegar
APPLE GINGER CHUTNEY:
2 large Granny Smith Apples, peeled, cored and chopped ½-inch dice (.5 cm)
1 cup (250 ml) fine chopped onion
¾ cup (175 ml) cider vinegar
¾ cup (175 ml) firm packed dark brown sugar
½ cup (75 ml) currants or golden raisins
3 tbsp (45 ml) finely minced ginger
½ tsp (2 ml) dry mustard
½ tsp (2 ml) salt
½ tsp (2 ml) dried hot red pepper flakes
Instructions
- In a large mixing bowl, combine Parmesan and Mexican cheese, garlic, onion, oats, eggs, oregano, Worcestershire sauce, and salt. Crumble turkey over mixture and mix well, taking care not to overmix. Cover and refrigerate 15 minutes. Shape into 8 X ½-inch (0.5 cm) thick patties.
- Preheat a grill pan or barbecue to medium-high heat. Using longhandled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill burgers, uncovered, 6 to 8 minutes on each side or until juices run clear. Add a smoked gouda slice to each patty right before taking off the grill, about 1 minute to allow for melting.
- Slice and toast buns. Spread a dollop Honey Mustard Sauce on the bottom of the bun. Add lettuce leaves and red onion. Transfer cheese topped patty and dollop with Apple Ginger Chutney.
- To make HONEY MUSTARD SAUCE, Mix all ingredients until well blended.
- To make APPLE GINGER CHUHTNEY, Add all ingredients to a medium saucepan and cook over medium heat. Bring the mixture to a boil, stirring occasionally for 40 minutes, or until it has thickened. Spoon into a sterilized glass jars with a tight lid.
