Green Chili Chicken Tacos served with Avocado Slaw
Ingredients
Serves 8 to 10
1 tbsp (15 ml) sunflower oil
3 large chicken breasts
salt and pepper, to taste
1 cup (250 ml) salsa verde
8 to 10 small corn tortillas, 4.5-in (11.25 cm) each
thinly sliced pickled red onion, radish, and/or jalapeño, as desired, for garnish
lime wedges, for garnish
chopped cilantro, for garnish
FOR AVOCADO SLAW:
½ avocado, chopped
1 tbsp (15 ml) sour cream
1 tbsp (15 ml) mayonnaise
¼ cup (60 ml) cilantro, leaves only
¼ tsp (1 ml) ground cumin
½ lime, juice only
3 cups (750 ml) shredded green or purple cabbage
salt and pepper, to taste
Instructions
- In a medium cast iron pan, heat oil over medium high heat. Season chicken with salt and pepper and sear on both sides for 1 to 2 minutes, until golden brown. Add salsa verde, reduce heat to low and cover pan. Cook for 20 minutes, or until chicken is cooked through.
- Remove from heat and let rest for half an hour. Using 2 forks, shred chicken in remaining sauce. Set aside until ready to use. If making ahead, refrigerate and reheat when ready to serve.
- Warm corn tortillas over a grill or hot pan until pliable; otherwise they will crumble when filled. Transfer warmed tortillas to a plate and cover with a clean tea towel after each addition to keep warm.
- To assemble, reheat filling, if needed. Add a heaping spoonful to middle of corn tortillas, top with Avocado Slaw and garnish as desired.
- To make Avocado Slaw, In a small blender, blend first 6 ingredients together until smooth. For a thinner dressing, add 1 tsp (5 ml) water at a time until desired consistency is achieved.
- In a medium bowl, toss cabbage with half the dressing and season with salt and pepper. Add more dressing as desired or reserve to use as extra sauce for tacos. Cover and refrigerate until ready to use. Can be made up to 30 minutes ahead; any more, and it may start to go brown.

Chorizo Tacos served with Pineapple Pico de Gallo
Ingredients
Serves 8 to 10
4 chorizo sausages, casings removed
1 tsp (5 ml) paprika
1 tsp (5 ml) chili powder
8 to 10 small corn tortillas, 4.5-in (11.25 cm) each

FOR PINEAPPLE PICO DE GALLO:
¾ cup (175 ml) red pepper, finely diced
⅓ cup (75 ml) red onion, finely diced
1 cup (250 ml) pineapple, diced
¼ cup (60 ml) cilantro leaves, chopped
1 tbsp (15 ml) jalapeño, seeded and finely diced
½ lime, juice only
salt, to taste

- In a large cast iron pan over medium heat, cook chorizo, breaking up with a wooden spoon. Add paprika and chili powder and cook for 10 to 15 minutes, until chorizo is fully cooked. Remove from heat and set aside. If making ahead, refrigerate and reheat when ready to serve.
- Warm corn tortillas over a grill or hot pan until pliable; otherwise they will crumble when filled. Transfer warmed tortillas to a plate and cover with a clean tea towel after each addition to keep warm.

Jackfruit Tacos served with Cashew Crema
Ingredients
Serves 8 to 10
1 x 20 oz (600 ml) can jackfruit
1 tbsp (15 ml) sunflower oil
½ yellow onion, sliced
2 garlic cloves, minced
1 tsp (5 ml) ground cumin
1 tsp (5 ml) paprika
1 tsp (5 ml) chili powder
½ tsp (2.5 ml) ground coriander
½ tsp (2.5 ml) dried oregano
1 tbsp (15 ml) brown sugar
1 tbsp (15 ml) chipotle purée
salt, to taste

FOR CASHEW CREMA:
1 cup (250 ml) raw cashews, soaked overnight and drained
2 garlic cloves
½ jalapeño, seeded and chopped
1 lime, juice only
½ cup (125 ml) cilantro leaves and stems
¼ cup (60 ml) water, plus extra as needed
salt and pepper, to taste

- Drain jackfruit and rinse thoroughly in warm water. Gently break apart with fingers or slice along the grain into ⅛-in (0.25 cm) strips.
- Heat oil in a medium cast iron pan over medium-high heat. Add onion and sauté until soft, then add garlic. Cook for 1 to 2 minutes then add spices, sugar, chipotle and jackfruit, sautéing for a few minutes more. Add ½ cup (125 ml) water, then simmer for 10 to 15 minutes, breaking apart with a spatula, until water has mostly evaporated and jackfruit resembles pulled pork. You may need to add more water if jackfruit hasn’t broken down. Season with salt and set aside until ready to assemble.
- Warm corn tortillas over a grill or hot pan until pliable; otherwise they will crumble when filled. Transfer warmed tortillas to a plate and cover with a clean tea towel after each addition to keep warm.
- To assemble, reheat filling, if needed. Add a heaping spoonful to middle of corn tortillas, drizzle with Cashew Crema and garnish as desired.
- To make Cashew Crema, In a small blender, combine all ingredients on high until creamy. If needed, add water, 1 tbsp (15 ml) at a time, until desired consistency is achieved. Refrigerate for 1 hour so sauce can thicken, and keep chilled until ready to use. Will keep for up to 1 week in refrigerator.

Pea, Mint and Preserved Lemon Tart
Ingredients
Serves 8
1 lb (500 g) fresh or frozen peas
1 tbsp (15 ml) olive oil, plus extra for brushing
4 green onions, trimmed and sliced
salt and black pepper, to taste
1 x 14 oz (398 ml) can white beans
1 large egg
1 preserved lemon, flesh discarded and rind finely minced (Available at specialty grocery stores)
½ cup (125 ml) pitted green olives, roughly chopped
¼ tsp (1 ml) red pepper chili flakes
½ cup (125 ml) packed mint leaves, roughly chopped
½ cup (125 ml) packed flat-leaf parsley leaves, roughly chopped
1 box (10 sheets) phyllo pastry
Instructions
- Place an oven rack in lower third of oven and preheat to 425 F (220 C).
- Bring a medium saucepan of salted water to a boil over high heat and cook peas until tender, about 1 to 4 minutes, depending on whether peas are fresh or frozen. Drain and set aside.
- Heat 1 tbsp (15 ml) olive oil in a 10-in (25 cm) cast iron pan over medium heat and sauté green onions with a pinch of salt until softened, about 4 minutes. Set aside.
- In a food processor fitted with steel blade attachment, blend white beans, egg and half the peas until smooth. Transfer to a large bowl and stir in remaining peas, sautéed green onions, preserved lemon, olives, chili flakes, mint, parsley and a good pinch each of salt and pepper until well combined. Set aside.
- Unroll phyllo sheets to lay flat on counter and cover with a clean, damp tea towel to prevent from drying out. Place 1 phyllo sheet in front of you and brush generously with olive oil. Place another phyllo sheet on top of first and brush with olive oil. Repeat stacking and brushing until you have 5 phyllo sheets total. Gently press phyllo stack into cast iron pan used to sauté green onions, letting it hang over edge. Repeat stacking and brushing of phyllo sheets until you have another stack of 5. Gently press second phyllo stack into pan at a 90-degree angle to the last stack, again letting it hang over edges.
- Spoon filling into middle of pastry and spread evenly across base. Crinkle up excess phyllo from overhang to form a wavy, textured crust around filling. Cook over medium heat for 3 minutes to crisp up bottom of pastry. Transfer to oven and bake until pastry is golden brown and crisp, about 20 to 25 minutes. Remove from oven and allow to cool for 15 minutes before serving.

Orange Roast Leg of Lamb
Ingredients
Serves 8
4 lb (2 kg) bone-in leg of lamb, set out at room temperature for 1 hour
2 tsp (10 ml) fennel seeds
4 garlic cloves, divided, minced
¼ cup (60 ml) unsalted butter, room temperature
2 navel oranges
salt, to taste
2 mandarin oranges
2 cups (500 ml) packed flat-leaf parsley
2 green onions, trimmed, roughly chopped
½ cup (125 ml) whole blanched almonds
½ cup (125 ml) olive oil
Instructions
- Preheat oven to 400 F (200 C).
- Using a mortar and pestle, gently pound fennel seeds to break them up a bit. Alternatively, crush under a heavy pot or pan. Transfer to a bowl along with 3 minced garlic cloves, butter, finely grated zest of 1 orange and a good pinch of salt. Stir to combine and set aside.
- Pat lamb dry with paper towel and make a dozen or so deep cuts all over meat with point of a sharp knife. Use a teaspoon or finger to push some of butter mixture into cuts, then smear rest all over leg. Place in a roasting pan. Halve the zested orange and squeeze juice over lamb. Thickly slice half of remaining orange and mandarins, peel and all, removing seeds if necessary, and arrange on top of lamb.
- Cover roasting pan with tinfoil and roast for 45 minutes. Remove tinfoil, baste leg with any juices in bottom of roasting pan, or, if not much juice is present, use extra orange juice and continue to roast for another 45 minutes to 1 hour for medium rare. An instant-read thermometer, inserted 2-in (5 cm) into thickest part of leg should register 130 F (54 C).
- Meanwhile, make parsley sauce. In a food processor, pulse parsley, green onions, remaining garlic and almonds until finely chopped. With motor running, gradually add olive oil. Season with salt and juice from half of remaining orange, to taste. Set aside until ready to serve.
- Transfer cooked lamb to a cutting board and allow to rest for 20 to 30 minutes. Slice and serve with parsley sauce on side.

Beef with Whisky Mushroom Cream Sauce
Ingredients
Serves 4
2 lb (1 kg) beef tenderloin, cut into four 8 oz (250 g) steaks
½ cup (125 ml) quick-cooking steel-cut oats
2 tbsp (30 ml) grapeseed oil, divided
¼ tsp (1 ml) dried thyme
1 pinch each garlic powder, onion powder and paprika
salt and pepper, to taste
3 tbsp (45 ml) unsalted butter, divided
8 oz (250 g) mixed mushrooms, chopped or sliced into bite-sized pieces
1 sprig fresh thyme
3 tbsp (45 ml) whisky
¼ cup (60 ml) beef stock
3 tbsp (45 ml) whipping cream
8 cups (2 L) roughly chopped mixed cooked greens, such as spinach, kale and Swiss chard mashed potatoes, for serving
Instructions
- Preheat oven to 350 F (180 C). Remove beef tenderloins from refrigerator and let sit at room temperature for 30 minutes while preparing oat topping.
- On a baking sheet, toss together oats, 1 tbsp (15 ml) oil, dried thyme, garlic powder, onion powder, paprika and a pinch of salt. Bake, mixing occasionally, until oats are toasted and mixture is fragrant, about 8 to 10 minutes. Set aside to cool. Increase oven temperature to 400 F (200 C).
- Heat remaining 1 tbsp (15 ml) oil in a large ovenproof skillet or frying pan over medium-high heat. Generously season beef tenderloins with salt and pepper. When oil is shimmering, add steaks and sear on each side, about 2 minutes per side. Transfer skillet to oven and roast until meat registers 120 F to 125 F (49 C to 52 C) on a meat thermometer, about 8 to 12 minutes. Remove from oven, transfer to a cutting board and let rest for 10 minutes.
- To make Whisky Mushroom Cream Sauce, place skillet back over medium-high heat and add 2 tbsp (30 ml) butter. Once butter stops foaming, add mushrooms, thyme and a pinch of salt, and sauté until mushrooms start to brown, about 5 minutes. Deglaze pan with whisky and reduce to 1 tbsp (15 ml). Stir in stock and cream and simmer until sauce has thickened slightly, about 4 minutes. Remove skillet from heat and season sauce with salt to taste. Discard thyme sprig.
- Melt remaining 1 tbsp (15 ml) butter in a frying pan over medium-high heat. Add mixed greens, water and a pinch of salt. Sauté until wilted and liquid has evaporated, about 4 minutes. Remove from heat and season with salt and pepper to taste.
- To serve, arrange a dollop of mashed potatoes and mixed greens on each serving plate. Top with tenderloin and sprinkle some oat topping over steak. Drizzle Whisky Mushroom Cream Sauce around plate and serve.

Lobster Noodles
Ingredients
Serves 4 to 6
2 x 2 lb (1 kg) whole live lobsters (Alternately, have your fishmonger cook the lobster for you and begin at step 2)
2 tbsp (30 ml) vegetable oil
2 tbsp (30 ml) minced ginger, plus fried julienned ginger, for garnish
2 tbsp (30 ml) minced garlic
1 x 10 oz (300 g) package yee-mein (longevity) noodles, boiled per package instructions, then drained
¼ cup (60 ml) black bean sauce
¼ cup (60 ml) soy sauce
3 tbsp (45 ml) sugar
2 tbsp (30 ml) Shaoxing cooking wine
4 green onions, thinly sliced on the bias
Instructions
- If cooking lobster yourself, bring a large pot of salted water to a boil. Add lobsters and cook over high heat for 14 minutes (2 minutes per pound). Remove lobsters from water and immediately place in an ice bath until completely chilled. Once lobsters have chilled, twist off heads and save for another use.
- Cut tails into 1-in (2.5 cm) slices and set aside. Remove meat from claws and chop meat into small chunks, then set aside.
- Heat a wok over medium-high heat. Add vegetable oil, then ginger and garlic, and stir-fry until fragrant, about 30 seconds.
- Add yee-mein noodles, black bean sauce, soy sauce, sugar and cooking wine. Stir-fry until noodles are hot and evenly mixed with sauce. Add chopped lobster claw meat and mix until combined.
- Transfer noodles to a warm serving platter.
- Return wok to heat and add sliced lobster tail. Add 2 tbsp (30 ml) water to wok and cover with a lid. Heat lobster slices just until warmed through, then toss with any remaining liquid in the wok. Arrange lobster slices over noodles and garnish with green onions and crispy ginger.

TWICE-BAKED CITRUS ALMOND BRIOCHE SERVED WITH CITRUS SALAD
Ingredients
Serves 6
1¼ cups (310 ml) sliced almonds, divided
½ cup (125 ml) granulated sugar, divided
½ tsp (2 ml) salt
1 large egg
¼ cup (60 ml) unsalted butter, at room temperature
¼ tsp (1 ml) almond extract
1 tbsp (15 ml) orange zest
½ cup (125 ml) Champagne
1 tbsp (15 ml) grapeseed oil
6 slices brioche bread, each about ¾-in (2 cm) thick
1 tbsp (15 ml) honey
2 tbsp (30 ml) lime juice
1 red grapefruit
1 pink or white grapefruit
4 oranges
1 clementine
½ cup (125 ml) pomegranate seeds

- Preheat oven to 400 F (200 C).
- In bowl of a food processor fitted with steel blade attachment, pulse together ½ cup (125 ml) almonds, ¼ cup (60 ml) sugar and salt until finely ground. Add egg, butter and almond extract and process to form a paste.
- In small saucepan, bring orange zest, Champagne and remaining ¼ cup (60 ml) sugar to a simmer over medium-high heat, stirring, until sugar dissolves. Remove from heat and let cool to room temperature.
- In small bowl, stir together olive oil and remaining ¾ cup (175 ml) almonds.
- Arrange bread in a single layer on a parchment-lined baking sheet. Brush each slice generously with Champagne syrup until very moist, then spread with about 2 tbsp (30 ml) of almond paste in an even layer. Top with almond mixture.
- Bake until brioche toasts are caramelized on edges and almonds are golden brown, about 20 to 25 minutes.
- While brioche bakes, prepare Citrus Salad. In a small bowl, whisk together honey and lime juice. Cut away peel and pith of grapefruits, oranges and clementine before slicing into rounds. Arrange citrus rounds on a plate or platter. Sprinkle with pomegranate seeds and drizzle with honey mixture. Let aside for 10 minutes.
- Serve warm Citrus-Almond brioche with citrus salad and an additional drizzle of any leftover Champagne syrup, if desired.

ROASTED PEPPER AND EGG GALETTES
Ingredients
Serves 6
2 large red peppers, seeded and cut into ½-in (1.25 cm) strips
1 large yellow pepper, seeded and cut into ½-in (1.25 cm) strips
½ large red onion, cut into ½-in (1.25 cm) strips
½ tsp (2.5 ml) dried thyme
1 tsp (5 ml) ground coriander
1 tsp (5 ml) ground cumin
2 tbsp (30 ml) extra-virgin olive oil
salt and pepper, to taste
3 tbsp (45 ml) chopped flat-leaf parsley
1 lb (500 g) puff pastry
7 large eggs
3 tbsp (45 ml) whole milk Greek yogurt
Instructions
- Preheat oven to 400 F (200 C).
- In a large bowl, toss together red and yellow peppers, red onion, thyme, coriander, cumin, oil and a good pinch of salt and pepper. Spread out in a single layer on a baking sheet and roast until softened but not charred, about 30 to 35 minutes, stirring once halfway through cooking time. Vegetables should be soft but not charred. Remove vegetables from oven and mix in half the parsley. Increase oven temperature to 425 F (220 C).
- On a lightly floured work surface roll puff pastry into a 12-in x 8-in (30 cm x 20 cm) rectangle before cutting into 6 equal squares about 4-in (10 cm) each. Prick squares of puff pastry with a fork and place them on a parchment-lined baking sheet.
- In a small bowl, beat 1 egg until well combined. Brush each square of puff pastry with beaten egg. Spread ½ tbsp (7 ml) yogurt on each square leaving a ½-in (1.25 cm) border. Top yogurt with a spoonful of vegetable mixture. Create a well in centre of vegetables and bake galettes for 14 minutes. Crack an egg into each vegetable well and return galettes to oven until egg is cooked to desired doneness, about 5 to 7 minutes.
- Sprinkle with additional salt and pepper along with remaining parsley. Serve immediately.

VEGETABLE MEDLEY POLENTA PIE
Ingredients
Serves 6
3½ cups (875 ml) vegetable stock
1 cup (250 ml) polenta
2 cups (500 ml) almonds, shelled
¾ cup (175 ml) water
5 garlic cloves, roasted
2 tbsp (30 ml) nutritional yeast.
salt and pepper, to taste
1 large zucchini
1 large sweet potato
1 small eggplant
thyme leaves, for garnish
Instructions
- Preheat oven to 350 F (175 C).
- Line a 9-in (2.5 L ) springform cake pan with parchment paper, including sides. Spray with non-stick spray and set aside. Repeat with a cookie sheet.
- In a medium saucepan, over high heat, bring vegetable stock to boil. Whisk in polenta, stirring constantly. Reduce heat to low, cover with a lid and cook for 5 minutes, until thick. Pour just enough into cake pan to cover bottom (a little less than half ). Pour remaining polenta onto cookie sheet and spread with a spatula. Refrigerate both for 30 minutes.
- In a high-speed blender, add almonds, water, garlic and nutritional yeast. Blend on high, scraping down sides. If still too thick, add a little more water, to form a smooth, ricotta-like texture.
- Remove polenta from refrigerator. Cut two 2-in (5 cm) wide long strips of polenta from the cookie sheet. Place these along sides of cake pan to form the “crust,” making sure there are no gaps at base. Pour almond “ricotta” into base of pan and spread evenly. Return to refrigerator while preparing vegetables.
- Slice all vegetables into ⅛-in (0.25 cm) rounds. Sprinkle zucchini and eggplant with a little salt and let sit for 5 minutes. Pat dry using a paper towel. Assemble vegetables, either overlapping horizontally or vertically, on top of almond “ricotta.”
- Bake for 45 minutes, until vegetables are fork-tender. Garnish with fresh thyme leaves and serve
