
GRILLED APRICOTS WITH GOAT’S CHEESE AND HONEY
Ingredients
Serves 4
1 tbsp (30 ml) olive oil
8 fresh apricots, halved and pitted
4 oz (125 g) goat’s cheese, preferably soft and creamy variety
2 tbsp (30 ml) honey
sprigs of fresh mint or rosemary, for garnish
fresh greens (optional)
Instructions
- Preheat barbecue to medium and lightly oil grill. Alternatively, heat a lightly oiled cast iron pan on medium-high heat.
- Grill apricots cut sides down until fruit is easily turned. Turn apricots and continue cooking until they are soft. Place on a platter and top each half with goat’s cheese. Drizzle with honey and garnish with mint or rosemary. Serve immediately as a side dish or on fresh greens.

THAI SEAFOOD SALAD
Ingredients
Serves 4
DRESSING:
6 tbsp (90 ml) fresh lime juice
4 to 5 tbsp (60 to 75 ml) fish sauce
1 tbsp (15 ml) granulated sugar
1 small Serrano chili, seeded and minced
2 tbsp (30 ml) olive oil
SEAFOOD SALAD:
24 small mussels
1 tbsp (15 ml) salt
4 medium-sized prawns, shelled and deveined, tails intact
½ lb (250 g) cleaned squid, cut into ½-in (1.25 cm) rings, tentacles halved if large
½ lb (250 g) sea or bay scallops
¼ lb (125 g) cooked fresh crabmeat
2 cups (500 ml) bite-sized pieces Boston or Bibb lettuce, rinsed and dried
1 large shallot, peeled and finely sliced
4 green onions, thinly sliced
1 small handful cilantro sprigs, rinsed and dried
1 small handful fresh mint, rinsed and dried
½ English cucumber, halved lengthwise and sliced into thick half-moons
½ cup (125 ml) halved cherry tomatoes
Instructions
- To make DRESSING: In a small mixing bowl whisk together lime juice, fish sauce, sugar, minced chili and olive oil. Stir to dissolve sugar. Set aside.
- For SALAD: Scrub mussels under cold water and place in a mediumsized saucepan. Add about ½ cup (125 ml) water, just enough to cover bottom of pan, cover with lid and set over high heat. Bring to a boil and cook until shells have opened, 1 to 2 minutes. Remove from heat and allow to cool. Remove cooked mussels, discarding any unopened ones, and place in a medium-sized bowl. Discard shells and cooking liquid.
- To cook remaining seafood, bring salt and 12 cups (3 L) water to a boil. Add prawns to boiling water and cook until pink on outside and opaque inside, about 2 minutes. Remove with slotted spoon, draining well on a clean tea towel, and transfer to bowl with mussels.
- Bring water back to a boil and add squid. Cook until firm and rings turn bright white, about 1 minute. Remove with slotted spoon, drain well on tea towel and add to cooked seafood.
- Bring cooking water back to a boil and cook scallops just until cooked through, about 1 minute for bay scallops, 2 minutes for sea scallops. Remove and drain before adding to seafood bowl.
- Add crabmeat to seafood bowl.
- To serve, arrange lettuce on a large serving platter or chilled serving plates. Add remaining ingredients to seafood and drizzle with dressing. Gently toss and arrange on top of lettuce beds. Drizzle any remaining dressing over salad.

SUNCHOKE CONFIT SALAD
Ingredients
Serves 4
NASTURTIUM OIL (OPTIONAL):
2 cups (500 ml) nasturtium leaves
½ cup (125 ml) olive oil
SALAD:
1 lb (500 g) sunchokes
1 cup (250 ml) duck fat or olive oil
1 tbsp (15 ml) white wine vinegar
1 tsp (5 ml) finely minced shallots
¼ cup (60 ml) hazelnut oil
½ cup (125 ml) fresh or frozen, shelled fava beans
1 radish, thinly sliced
2 cups (500 ml) micro greens
½ cup (125 ml) hazelnuts, roasted and skinned
sea salt and freshly ground black pepper, to taste
edible flowers for garnish
Instructions
- To make NASTURTIUM OIL: Place leaves and oil in a blender and process until smooth. Transfer to a non-reactive container and cover. Refrigerate until ready to use.
- To make SALAD: Peel sunchokes and reserve. Pour duck fat or olive oil into a small saucepan and heat over medium-low heat. When warm, add sunchokes and cook, uncovered, for about 1 to 2 hours over low heat (fat/oil temperature 180 to 190 F), until tender. Remove sunchokes from pan and place on cooling rack set over a baking sheet to drain.
- To make vinaigrette, combine white wine vinegar and shallots in a small bowl. Slowly drizzle in hazelnut oil while whisking, until emulsified.
- When sunchokes have cooled, slice and place in a large bowl. Add fava beans, radishes, micro greens and hazelnuts and drizzle with vinaigrette. Toss to coat. Add salt and pepper to taste.
- To serve, divide salad among 4 serving plates, garnish with edible flowers, drizzle a little more dressing around salad and serve. Garnish with dots of Nasturtium Oil.

WARM NUGGET AND SMOKED SALMON SALAD
Ingredients
Serves 4 to 6
⅓ cup (75 ml) apple cider vinegar
1½ tsp (7 ml) berry sugar
¼ tsp (1 ml) salt, plus extra
1 small red onion, peeled and thinly sliced
1½ lbs (750 g) red baby potatoes
1 cup (250 ml) snap peas, trimmed
1 cup (250 ml) French beans, trimmed and cut in half on the diagonal
¼ cup (60 ml) sour cream
2 tbsp (30 ml) extra-virgin olive oil
1 tbsp (15 ml) fresh lemon juice
2 tsp (10 ml) Dijon mustard
freshly ground white pepper
1 cup (250 ml) frozen sweet peas, thawed
1 tbsp (15 ml) chopped fresh tarragon
1 tbsp (15 ml) chopped chervil or parsley leaves
2 tsp (10 ml) chopped fresh dill
¼ lb (125 g) sliced smoked salmon, cut into bite-sized julienne pieces
2 whole green onions, thinly cut on the diagonal, for garnish
lemon wedges, for garnish

- In a non-metallic bowl, combine vinegar, sugar and ¼ tsp (1 ml) salt. Stir to dissolve sugar. Add onion and set aside to pickle while preparing remainder of recipe.
- In large saucepan, place potatoes with just enough water to cover. Bring to a boil. Reduce heat and simmer with lid ajar for 15 minutes, or until tender when pierced.
- About 3 to 5 minutes before potatoes have finished cooking, add snap peas and French beans to saucepan. Cover and continue to cook until potatoes are done as you like and peas and beans are tender but still a little crisp.
- While potatoes are cooking, in a small bowl combine sour cream, oil, lemon juice, and Dijon. Whisk to blend adding fresh pepper to taste. Add a little water if dressing seems too thick. Set aside.
- When potatoes, snap peas and beans are done as preferred, drain thoroughly, shaking off as much water as possible. Place in a large bowl along with thawed sweet peas, tarragon, chervil and dill.
- Drain pickled onions, blot dry and add to bowl, along with smoked salmon. Gently fold together to lightly coat.
- Spoon onto serving plates and scatter green onions over top.
- Give dressing another whisk and drizzle over plates. Add a little more salt and pepper to taste, if desired. Serve warm with lemon wedges.

TURKEY RILLETTES CROSTINI WITH CELERIAC SALAD
Ingredients
Serves about 40 crostini
TURKEY RILLETTES:
1 tbsp (15 ml) extra-virgin olive oil
1 medium-sized shallot, peeled, chopped
1 garlic clove, minced
2 tsp (10 ml) chopped fresh thyme
salt and pepper, to taste
2 slices of bacon
2½ cups (625 ml) cooked, shredded, dark turkey meat
½ cup (125 ml) duck fat, divided
1½ cups (375 ml) low-sodium turkey stock
1 tbsp (15 ml) cognac
1 sourdough baguette, ½-in (1 cm) rounds
CELERIAC SALAD:
1½ tsp (7 ml) cumin seeds
1 lemon, halved, divided
½ small celeriac
1 tbsp (15 ml) extra-virgin olive oil
½ tsp (2 ml) liquid clover honey
salt, to taste
¾ cup (175 ml) chopped fresh parsley
½ cup (125 ml) pomegranate seeds
Instructions
- To make TURKEY RILLETTES: Warm oil in frying pan over medium heat. Add finely chopped shallot and cook, stirring often, until starting to caramelize. Stir in garlic, thyme and pinch of salt and pepper. Allow to cook another minute. Transfer to a bowl and set aside.
- Add bacon to a large saucepan over medium heat. Cook, turning once or twice, until crisp, about 3 to 4 minutes. Transfer to a paper towel-lined plate to drain. Chop into small pieces.
- In a food processor, add shredded turkey meat, shallot mixture, bacon and 2 tbsp (30ml) duck fat. Pulse until well combined and turkey is finely chopped. Slowly add 1⁄2 cup (125 ml) stock, pulsing to combine, before adding another 2 tbsp (30 ml) duck fat, pulsing until well combined. Continue alternating remaining stock and duck fat until mixture is spreadable but still slightly chunky. You may not need all the stock. Stir in cognac and season to taste. Transfer to a bowl, cover with plastic wrap and refrigerate at least 1 hour. Turkey Rillettes may be made 1 day ahead and refrigerated until ready to use.
- Preheat oven to 350 F (180 C). To make crostini, place baguette rounds on a baking sheet in a single layer, leaving about 1⁄2-in (1 cm) between each. Lightly brush both sides with a little olive oil before baking until crisp and golden brown, 6 to 8 minutes. Allow to cool completely on baking tray.
- Before serving, make CELERIAC SALAD: In a dry frying pan, toast cumin seeds over medium heat until fragrant, 2 minutes. Set aside to cool.
- Half fill a medium bowl with cold water and squeeze in juice of half a lemon. Trim celeriac and cut into 1⁄2-in (1 cm) half moons. Using a mandolin or vegetable peeler, slice celeriac into thin strips. Add strips to lemon water as they are cut to prevent browning.
- In a small bowl, whisk together juice from remaining lemon half, oil, honey and pinch of salt. Set aside.
- In a medium bowl, toss together parsley, pomegranate seeds, cumin and thoroughly drained celeriac strips. Pour dressing over salad and toss well to coat. Season to taste with more salt.
- Spread 1 tbsp (15 ml) turkey rillettes over crostini. Top with celeriac salad and serve.

SWEET AND SPICY LOBSTER NOODLE SALAD
Ingredients
Serves 4
DRESSING:
¼ cup (60 ml) grape seed oil
4 large garlic cloves, thinly sliced
2 large shallots, thinly sliced
salt, to taste
1 fresh long Thai chili
3 tbsp (45 ml) Asian fish sauce
3 tbsp (45 ml) lime juice
2 tbsp (30 ml) clover honey, plus extra
1 tsp (5 ml) sambal oelek
¼ tsp (1 ml) toasted sesame oil
LOBSTER SALAD:
8 small cooked lobster tails
4 oz (125 g) vermicelli rice noodles
1 unpeeled English cucumber, thinly sliced into rounds
3 radishes, thinly sliced into rounds
2 naval oranges, peeled and sliced into segments
3 cups (750 ml) mixture of Asian baby greens
1 large Hass avocado, peeled, pitted and cut into chunks
2 tbsp (30 ml) chopped, roasted, salted peanuts
2 tbsp (30 ml) fresh mint leaves
2 tbsp (30 ml) fresh cilantro leaves
Instructions
- To make DRESSING: In a small frying pan heat grape seed oil over medium-low heat, add garlic, shallots and a pinch of salt. Cook, stirring occasionally, until garlic and shallots are golden, about 7 minutes. Transfer to a medium-sized bowl. Stir in chili, fish sauce, lime juice, honey, sambal oelek and sesame oil. Season dressing to taste with additional salt and honey. Set aside.
- To make LOBSTER SALAD: Using scissors, cut along underside of lobster tail shells and remove meat. Remove and discard dark vein from each piece of tail meat. Reserve shells for another use. Slice 4 lobster tails into 1-in (2.5 cm) pieces and leave remaining 4 whole.
- In a medium-sized heat-proof bowl, cover rice noodles with boiling water and let stand until pliable and tender, about 10 minutes. Drain noodles thoroughly and place in a large bowl. Add dressing and toss to coat, allowing noodles to marinate in dressing for 10 minutes. Add cut lobster, cucumber slices, radishes, orange segments and baby greens. Gently toss together until well combined. Transfer to a serving plate and garnish with remaining whole lobster tails, avocado, peanuts, mint and cilantro. Serve immediately.

ZUCCHINI AND CARROT SALAD
Ingredients
Serves 4
1 zucchini, shaved thinly on a mandolin or with a vegetable peeler
1 carrot, shaved thinly on a mandolin or with a vegetable peeler
pinch of ground cumin, toasted
pinch of preserved lemon, chopped finely
2 black cured olives, chopped roughly
2 tbsp (30 ml) olive oil
1 tbsp (15 ml) lemon juice
pinch freshly ground pepper
1 tbsp (15 ml) pistachio nuts, toasted and chopped roughly
2 tbsp (30 ml) feta cheese, cubed
2 tbsp (30 ml) mint, roughly chopped
Instructions
- Toss all ingredients in a bowl, except for the pistachio, feta and mint. Adjust seasoning to taste. The preserved lemon, olives and feta are all salty, so you may not need salt.
- Garnish the salad with the pistachios, feta, and mint.

SUMMER SALAD IN A JAR
Ingredients
Serves 4 to 6
2 cups (500 ml) mini bocconcini, halved
2 tbsp (30 ml) sundried tomatoes, packed in oil and coarsely chopped
1 tbsp (15 ml) sundried tomato oil
1 large garlic clove, minced
1 tsp (5 ml) kosher salt
½ tsp (2 ml) freshly ground black pepper
¼ cup (60 ml) fresh basil, some left whole for garnish, all others shredded
⅓ cup (75 ml) extra-virgin olive oil
2 tbsp (30 ml) balsamic vinegar
2 cups (500 ml) grape tomatoes, halved
6 small cucumbers, thinly sliced
2 large orange or yellow peppers, seeded and cubed
3 cups (750 ml) green lettuce of your choice
⅓ cup (75 ml) pine nuts, lightly toasted
½ cup (125 ml) cooked pancetta, coarsely chopped
Parmesan shavings
Instructions
- In a small bowl, combine bocconcini, sundried tomatoes, sundried tomato oil, garlic, salt, pepper and half the shredded basil. Set aside for 15 to 30 minutes.
- Meanwhile, prepare dressing by combining olive oil, balsamic vinegar and remaining shredded basil leaves. Taste and season with salt and pepper, as needed.
- To assemble, pour 2 tbsp (30 ml) of dressing into each jar, arrange a layer of grape tomatoes, followed by a layer of bocconcini mixture, a layer of cucumbers, a layer of yellow or orange peppers and repeat until the jar is three quarters full. This will vary depending on size of jar. Add lettuce on top. Garnish with pine nuts, pancetta and Parmesan shavings. Finish with a few small basil leaves.

SMOKED TURKEY SALAD WITH POMEGRANATE VINAIGRETTE
Ingredients
Serves 4 to 6
VINAIGRETTE
¼ cup (60 ml) pomegranate juice
3 tbsp (45 ml) extra-virgin olive oil
3 tbsp (45 ml) sherry vinegar
1 tsp (5 ml) Dijon mustard
1 clove garlic, finely minced
½ shallot, peeled and finely minced
sea salt and freshly ground black pepper
SALAD
1 tbsp (15 ml) olive oil
¼ lb (125 g) prosciutto, thinly sliced, cut into ½-in (1.25 cm) strips
1 x 5 oz (140 g) bag pre-washed baby arugula
1 small Belgian endive, cleaned, dried and julienned
1 small head radicchio, washed, dried and cut into ½-in (1.25 cm) julienne pieces
¾ lb (340 g) smoked turkey breast, shredded or cut into ½-in (1.25 cm) dice
2 ripe pears, halved, cored and thinly sliced
2 to 4 oz (60 to 125 g) goat’s cheese, for garnish
1 cup (250 ml) pomegranate seeds, for garnish
½ cup (125 ml) toasted pumpkin seeds, for garnish

- In a mixing bowl, whisk together Vinaigrette ingredients until well blended. Set aside.
- For Salad, heat olive oil in a medium-sized frying pan over medium-high heat. Add prosciutto and brown on all sides, about 3 to 4 minutes, or until crisp. Drain on paper towels.
- In a large bowl, add arugula, Belgian endive, radicchio, smoked turkey and pear slices. Drizzle with half the vinaigrette and toss well. Divide among 4 to 6 chilled serving plates. Garnish with goat’s cheese, pomegranate seeds and pumpkin seeds. Serve remaining vinaigrette on the side.

SENSATIONAL SALAD
Ingredients

PICKLED RADISHES:
1 bunch red radishes, trimmed and thinly sliced
1 small yellow onion, thinly sliced
½ cup (125 ml) each distilled vinegar and water
1 tbsp (15 ml) pure maple syrup
1 tsp (5 ml) fennel seeds
PUMPKIN PURÉE:
1 tbsp (15 ml) olive oil
1 large shallot, peeled and minced
1 garlic clove, minced
⅓ cup (75 ml) orange juice
1 cup (250 ml) unseasoned pumpkin purée
¼ tsp (1 ml) Chinese 5 Spice
¼ cup (50 ml) whipping cream
SALAD TOPPERS:
1 cup (250 ml) small cauliflower florets
6 Brussels sprouts, trimmed and separated into individual leaves
1 small carrot, peeled
100 g pkg goat’s cheese, shaped into quenelles
½ cup (125 ml) fresh sheep’s sorrel*
cayenne pepper
Instructions
- To make PICKLED RADISHES: Arrange radishes and onion in alternate layers in a 4-cup (1 L) Mason jar. In a small saucepan, combine vinegar, maple syrup and fennel seeds. Bring to a boil and stir to blend. Pour hot mixture over radishes and onions, press down to fully immerse slices in liquid. Set aside, uncovered, and allow to reach room temperature before tightly sealing and refrigerating. Can be served immediately or refrigerated for several weeks.
- To make PUMPKIN PURÉE: Heat oil in small frying pan. Add shallot and garlic, sauté until soft. Add juice to deglaze pan. Stir in pumpkin purée, Chinese 5 Spice and cream. Whisk over medium-low heat until mixture is thick enough to hold its shape. Transfer to a squeeze bottle and set aside.
- To make SALAD TOPPERS: Bring water to a boil. Place cauliflower florets in a sieve and plunge into boiling water for 30 seconds. Remove and place in a bowl of ice water. Strain well, transfer onto a paper towel-lined plate. Repeat process with Brussels sprout leaves. Shave peeled carrot into thin, julienne strips.
- In a small bowl, stir goat’s cheese vigorously with a fork until softened and creamy. Take 2 small teaspoons and dip both into warm water. Shake off excess water and, with one spoon, take a scoop of creamy cheese and pass mixture repeatedly between spoons, smoothing each side until a neat quenelle is formed. Place on a chilled plate and refrigerate until ready to serve. Salad ingredients can be refrigerated for up to 1 day until ready to serve.
- To serve, pipe a circle of Pumpkin Purée onto inside rim of plate. With back of a spoon, smear purée in a whirl around rim of plate. On ⅓ of plate, assemble a collage of cauliflower florets, sprout leaves and twisted curls of carrots strips on purée. Place drained pickled radish into vegetables along with a few sorrel leaves and goat’s cheese quenelles. Dot quenelles with a pinch of cayenne. Serve salad immediately.
- *Sheep’s sorrel is available in specialty and natural food stores. It is also found growing wild in most vegetable gardens all season long where climates are moderate. Alternatively, use micro-greens if not available.
