BEET-CURED STEELHEAD TROUT ON DARK RYE
Ingredients
Serves 6 open faced sandwiches
¾ cup (175 ml) granulated sugar
½ cup (125 ml) kosher salt
½ tsp (2 ml) freshly ground black pepper
2 tbsp (30 ml) chopped fresh dill
½ tsp (2 ml) lemon zest
1½ lbs (750 g) steelhead trout fillet, scaled, pin-bones removed, skin left on
3 tbsp (45 ml) vodka
1 large red beet, peeled and grated
¼ cup (60 ml) Greek yogurt
3 tbsp (45 ml) mayonnaise
3 tbsp (45 ml) chopped fresh dill, plus extra for garnish
2 tsp (10 ml) fresh lemon juice
1 tsp (5 ml) chopped capers
1 tbsp (15 ml) finely chopped red onion
salt and freshly ground black pepper, to taste
6 pieces dark rye or Pumpernickel bread, toasted
2 tbsp (30 ml) salted butter
½ English cucumber, thinly sliced into rounds
½ yellow zucchini or yellow beet, thinly sliced into rounds
3 radishes, trimmed and thinly sliced
Instructions
- Line dish large enough to hold trout fillet with a double layer of aluminum foil and a layer of plastic wrap. In a bowl, stir together sugar, salt, pepper, dill and lemon zest. Scatter half the sugar mixture in a fat line down centre of prepared dish. Place trout fillet on top, skin-side down and sprinkle with vodka before covering with remaining sugar mixture. Place grated beet on top of sugared flesh side of fish. Wrap tightly with plastic wrap trout is sitting on and allow to cure in refrigerator for 2 days, flipping fish over after 24 hours. Unwrap fish, rinse off beet and sugar mixture under cold water and pat dry with paper towel. Slice fillet very thinly across fish on the bias, taking care to leave behind skin. Fan out on plate, wrap with plastic wrap and refrigerate until ready to use.
- In a bowl, whisk together yogurt, mayonnaise, dill, lemon juice, capers and red onion. Season to taste with salt and pepper. Refrigerate until ready to use.
- Just before ready to serve, spread bread with butter and then some lemondill sauce. Divide cucumber, zucchini and radishes equally among bread slices. Top with trout and garnish with dill sprigs, if desired. Serve immediately.

BUTTERMILK, ORANGE, AND ROSEMARY FRIED CHICKEN
Ingredients
Serves 6 to 8
1 cup (250 ml) buttermilk
1½ tsp (7 ml) cayenne pepper, divided
2 tsp (10 ml) smoked paprika
4 garlic cloves, crushed
½ yellow onion, sliced
2 sprigs rosemary, leaves removed from stem and minced
1 orange, zest only
3 tbsp (45 ml) kosher salt, divided
1 tbsp + 2 tsp (25 ml) black pepper, divided
6 chicken drumsticks, skin on
6 chicken thighs, skin on
canola oil, for frying
1 cup (250 ml) all-purpose flour
½ cup (125 ml) cornstarch
Instructions
- In a large bowl, combine buttermilk, 1 tsp (5 ml) cayenne, smoked paprika, garlic, onion, rosemary, orange zest, 2 tbsp (30 ml) salt, 1 tbsp (15 ml) black pepper and chicken. Transfer to a large Ziploc bag and refrigerate to marinate overnight, or up to 2 days.
- Remove chicken from marinade and drain well. Discard bag contents. Let chicken rest at room temperature for 1 hour before frying.
- Heat a deep fryer, or a large pot filled halfway with oil, to 350 F (180 C).
- In a large bowl, combine flour, cornstarch, remaining salt, black pepper, and cayenne.
- Dredge a piece of chicken in the flour mixture until completely coated. Dust off excess and gently place in the hot oil. Repeat with a couple more pieces of chicken. Do not add too many pieces of coated chicken at a time, or the oil temperature will reduce and cause chicken to absorb too much oil during cooking.
- Fry chicken in batches, 15 to 20 minutes each, turning occasionally with a slotted spoon. Remove chicken and pierce to the bone. Chicken is done when juices run clear when pierced and internal temperature reads 165 F (75 C).
- Remove chicken to a cooling rack to drain. Chicken can be eaten immediately, or cooled and refrigerated in a covered container and eaten cold at a picnic.

ASPARAGUS RIBBON SALAD WITH FRESH BURRATA
Ingredients
Serves 6
1 tbsp (15 ml) unsalted butter
2 oz (60 g) shiitake mushrooms, thinly sliced
salt and pepper, for seasoning
½ lb (250 g) fresh asparagus, tough ends trimmed
½ small head frisée lettuce, outer leaves trimmed
½ small head radicchio, trimmed and leaves separated
4 assorted radishes, trimmed
¼ cup (60 ml) extra-virgin olive oil
2 tbsp (30 ml) fresh lemon juice
2 tsp (10 ml) minced fresh tarragon
1 tsp (5 ml) Dijon mustard
⅓ cup (75 ml) burrata cheese
¼ cup (60 ml) pine nuts, toasted
Instructions
- Melt butter in a heavy-bottomed frying pan. Add sliced shiitakes and sauté over medium heat until golden. Season with a little salt and pepper and set aside.
- Meanwhile, wash and blot dry trimmed asparagus spears. Working with 1 spear at a time, use a vegetable peeler to shave spears into long, thin ribbons. Transfer ribbons to a large bowl. Set aside.
- Wash and spin-dry trimmed frisée and separate into bite-sized leaves. Add to asparagus. Repeat with radicchio. Thinly shave radishes on a mandolin, or cut with a paring knife into paper-thin slices, then add to asparagus and greens.
- In a small bowl, combine oil, juice, tarragon and mustard. Whisk vigorously until blended. Add salt and pepper to taste.
- Gently toss asparagus and greens with cooled shiitakes in bowl. Place equal amounts on 4 individual serving plates. Using a small spoon, drop little bits of soft burrata cheese onto each serving and sprinkle with pine nuts. Give oil dressing a quick whisk and drizzle over top. Dust with fresh pepper to taste and serve.

BRAISED LENTIL-STUFFED YAMS
Ingredients
Serves 4
4 medium-sized jewel yams
2 tbsp (30 ml) extra-virgin olive oil
1 medium-sized yellow onion, diced
2 garlic cloves, minced
1 sprig fresh thyme
2 cups (500 ml) black beluga lentils
2 cups (500 ml) vegetable broth
1½ cups (375 ml) crisp white wine
1 tsp (5 ml) ground cumin
3 cups (750 ml) baby spinach, baby kale or baby chard
salt and pepper, to taste
⅓ cup (75 ml) crumbled sheep’s milk feta
⅓ cup (75 ml) chopped, salted, roasted pistachios
2 tsp (10 ml) toasted sesame seeds
ground sumac, chopped flat-leaf parsley and finely grated lemon zest, for garnish

- Preheat oven to 400 F (200 C).
- Prick each yam a few times with a fork and place on a baking sheet. Bake until yam skins start to wrinkle and a knife easily pierces through flesh, about 35 to 50 minutes. Cooking time will vary depending on size of yams.
- Meanwhile, prepare lentils. In a large saucepan, warm olive oil over medium heat. Add onion and cook until translucent and softened, about 5 minutes. Add garlic and thyme and continue to cook another minute.
- Stir in lentils, then add broth, white wine and cumin. Stirring occasionally, bring lentil mixture to a simmer. Reduce heat to low, cover and cook, stirring occasionally, until lentils are tender, about 35 to 40 minutes.
- Strain and discard any extra cooking liquid. Return lentils to cooking pot, remove from heat, discard thyme stem and stir baby spinach (or kale, or chard) into warm lentil mixture, allowing spinach to wilt slightly. Season to taste with salt and pepper.
- When ready to serve, slice each yam along top lengthwise. Open and stuff with warm lentil mixture before topping with a sprinkle of feta, pistachios and sesame seeds. For an extra flourish and seasoning, garnish with a pinch of sumac, chopped parsley and lemon zest, if desired. Serve warm as a light meal or a hearty side dish.

BUTTER TART BAR
Ingredients

PASTRY:
1 cup (250 ml) butter, chilled and cut into cubes
2½ cups (625 ml) pastry flour
¼ tsp (1 ml) salt
¼ to ½ cup (60 to 125 ml) cold water
FILLING:
½ cup (125 ml) brown sugar
½ cup (125 ml) brown rice or corn syrup
1 egg
2 tbsp (30 ml) butter, melted
2 tsp (10 ml) vanilla extract
½ tsp (2.5 ml) salt
2 tsp (10 ml) Canadian rye whisky
½ cup (125 ml) raisins, soaked in hot water and drained
Instructions
- To make PASTRY: In a food processor blend the butter, flour, and salt until the mixture looks like coarse crumbs the size of a pea. Sprinkle with ¼ cup (60 ml) of water. Pulse until the dough sticks together when squeezed, adding up to ¼ cup (60 ml) more water if needed, 1 tbsp (5 ml) at a time. It will still look crumbly.
- Form the dough into two balls, wrap with saran wrap and chill in the fridge for at least 2 hours, preferably overnight.
- Roll the dough to 1¼-inch (3 cm) thickness and line the tart mould. Trim the edges and chill for 1 hour in the refrigerator.
- To make FILLING: Preheat oven to 350 F (180 C).
- Mix all ingredients together in a mixing bowl. Pour the filling into the tart shell and bake for 30 to 40 minutes, or until the pastry is golden brown.

BUBBLY BEER MACARONI AND CHEESE
Ingredients
Serves 4
1 tsp (5 ml) butter
½ medium onion, finely chopped
2 garlic cloves, minced
1 tsp (5 ml) dry mustard
1 tbsp (15 ml) salt
½ tsp (2 ml) black pepper
¼ cup (60 ml) stout or porter beer
½ cup (125 ml) whipping cream
½ cup (125 ml) whole milk
1 cup (250 ml) cream cheese
1 cup (250 ml) shredded mozzarella cheese
½ cup (125 ml) shredded aged cheddar cheese
2 cups (500 ml) dry elbow macaroni
Instructions
- Preheat oven to 375 F (190 C).
- In a medium saucepan, melt butter over medium heat, add onion and garlic and sauté until soft. Add dry mustard, salt and pepper and stir in to blend.
- Add beer and bring to a boil over high heat. Turn down heat to medium and simmer for about 5 minutes. Add cream, milk and cream cheese and stir until melted.
- Mix mozzarella and cheddar cheese together. Add ¾ of cheese mixture to pot and stir until just melted. Set remaining cheese aside.
- Meanwhile, add macaroni to a large pot of boiling salted water and cook according to package instructions. Thoroughly drain macaroni once cooked and add to cheese sauce. Fold in to evenly blend.
- Spoon into 4 individual greased ovenproof baking dishes large enough to contain macaroni and cheese. Sprinkle with remaining cheese.
- Bake in preheated oven for about 15 minutes, or until cheese is melted and sauce bubbles.

APPLE TARTE TATIN
Ingredients
Serves 4
1 cup (250 ml) granulated sugar
2 tbsp (30 ml) water
2 tbsp (30 ml) butter, plus extra for greasing ramekins
4 Granny Smith apples, peeled, cored and cut into quarters
1 cinnamon stick, broken
½ x 1 lb (500 g) frozen puff pastry, thawed
vanilla ice cream, for garnish
fresh mint sprigs, for garnish
Instructions
- Preheat oven to 375 F (190 C). Grease 4 x ¾ cup (175 ml) ramekins. Place on a baking sheet and set aside.
- Combine sugar and water in a medium, heavy-bottomed saucepan. Stir over medium heat until sugar is dissolved. Then continue simmering over medium heat until it begins to turn amber in colour. Immediately remove from the heat and pour enough caramelized sugar in the bottom of each ramekin to lightly coat.
- Keeping remaining caramelized sugar in saucepan, deglaze pan with butter. Add apples and broken cinnamon stick. Stir over medium heat and cook apples until almost tender and have started to release their juices, about 10 to 15 minutes. Apples should be coated in syrup. Divide apple mixture among ramekins and press slices in so they are flush with tops of ramekins. Set aside.
- Meanwhile, roll out pastry on a lightly floured surface into an 8 x 10-in (20 x 25 cm) rectangle about ¼-in (0.5 cm) thick. Cut into rounds using pastry cutter the diameter size of ramekins. If you don’t have a pastry cutter, use a small bowl to cut puff pastry. Place puff pastry rounds over each individual ramekin and slightly press into apples. Make several slits in pastry to allow steam to escape while baking.
- Bake for approximately 15 to 20 minutes, until pastry is golden and apples have started to bubble. Remove ramekins and cool on a rack for 20 to 30 minutes.
- To serve, run a knife around outside edge of ramekins. Carefully place dessert plate over ramekin, making sure it is pressed tightly to the plate to contain the juices. Use oven mitts if ramekin is too hot to touch. Immediately invert plate and let ramekin sit upside-down on plate for a few minutes. Tap top and allow Tartin to release from ramekin. Repeat with remaining ramekins. Serve with a scoop of vanilla ice cream and garnish with mint.

APRICOT ALMOND BUTTER BARS
Ingredients
Serves 16 large bars
2 cups (500 ml) large flake, old-fashioned rolled oats
½ cup (125 ml) slivered almonds
½ cup (125 ml) coarsely chopped hazelnuts
2 tbsp (30 ml) each flaxseeds, sesame seeds
2 cups (500 ml) unsweetened puffed whole grain cereal
⅔ cup (150 ml) dried currants
⅔ cup (150 ml) chopped dried apricots
½ cup (125 ml) chopped seedless raisins
½ cup (125 ml) creamy almond butter
⅓ cup (75 ml) light brown sugar
½ cup (125 ml) honey
1 tsp (5 ml) vanilla extract
½ tsp (2 ml) fine sea salt

- Position baking rack in centre of oven. Preheat to 350 F (180 C). Butter a 9 x 13-in (3.5 L) baking pan. Set aside.
- In a large mixing bowl, combine oats, almonds, hazelnuts, flaxseeds and sesame seeds. Spread evenly over a large baking sheet. Bake until oats are lightly golden and nuts are fragrant, 8 to 10 minutes, stirring to mix halfway through. Transfer to a large mixing bowl to cool. Add puffed cereal, currants, apricots and raisins. Toss to combine.
- In a medium-sized saucepan, combine almond butter, brown sugar, honey, vanilla and salt. Heat over medium-low, stirring frequently, until mixture is emulsified and bubbling slightly, 5 minutes.
- Immediately pour mixture over dry ingredients and mix well to coat. Transfer to buttered baking pan. Coat hands with canola oil or butter and press mixture down firmly, making an even layer. Refrigerate uncovered until firm, about 1 hour. Cut into bars.

BERRY TARTS
Ingredients
Serves 12 tarts
PASTRY:
8 tbsp (120 ml) unsalted butter, room temperature
⅓ cup (80 ml) powdered sugar
1 large egg yolk
½ tsp (2.5 ml) salt
1¼ cups (310 ml) all-purpose flour
1 tbsp (15 ml) cream or milk, if needed
PASTRY CREAM:
1 cup (250 ml) homogenized milk, divided
½ vanilla bean, split and scraped, divided
¼ cup (60 ml) granulated sugar
1 egg yolk
2 tsp (10 ml) cornstarch
2 cups (500 ml) fresh berries
Instructions
- To make PASTRY: Beat butter and powdered sugar in the bowl of a stand mixer until creamy. Beat in the egg yolk and keep mixing until the yolk is fully combined. Stop the mixer and scrape down the sides and bottom of the bowl.
- With the mixer on low speed, beat in the salt and flour, just until the dough comes together and there is no more visible flour. Do not overmix. If the dough appears dry or doesn’t hold together at this point, lightly mix in up to 1 tbsp (15 ml) cream or milk. Chill the dough for at least 1 hour, or preferably overnight.
- When ready to roll, remove the dough from fridge and let soften on the counter, for about 20 minutes. Roll the dough to ¾-inch (2 cm) thick and cut out circles large enough to fit your mini tart moulds.
- Line the mini tart moulds and trim the edges. Poke holes in the dough then chill in refrigerator for 1 hour.
- Bake at 375 F (190 C) for 8 to 10 minutes or until light golden brown. Cool before serving.
- To make PASTRY CREAM: In a heavy-bottomed saucepan over medium heat, stir together ¾ of the milk and vanilla beans. Bring to a boil.
- While milk is heating, in a separate bowl, mix together sugar and egg yolk. Add cornstarch and remaining milk to egg mixture and mix until combined.
- Once milk has come to a boil, temper the yolk mix with half the milk, stir to combine. Put back into saucepan and mix with remaining milk. Bring to a boil over medium high heat, stirring constantly. Remove from heat and let cool.
- Store with saran wrap directly on custard to prevent skin forming. Pastry Cream can be used once it has cooled to room temperature, or stored in refrigerator for up to 3 days.
- Fill each tart shell with pastry cream and decorate with the fresh berries. Serve.

CANDY CANE AND DARK CHOCOLATE SEMIFREDDO
Ingredients
Serves 16
6 oz (180 g) dark chocolate, coarsely chopped
3 tbsp (45 ml) unsalted butter
3 large egg whites
¾ cup (175 ml) granulated sugar
2 cups (500 ml) whipping cream
4 oz (125 g) mascarpone, room temperature
1 tsp (5 ml) peppermint extract (optional)
PEPPERMINT CANDY CANE SEMIFREDDO:
1½ cups (375 ml) whipping cream
½ cup (125 ml) coarsely crushed peppermint candy canes, plus more for garnish
3 large eggs, separated
½ cup (125 ml) granulated sugar
¼ cup (60 ml) mint liqueur or 1 tsp (5 ml) peppermint liqueur
Instructions
- Spray two 9 x 5-in (2 L) loaf pans with cooking oil and line with plastic wrap with a slight overhang.
- To make Dark Chocolate Semifreddo, melt chocolate in a double boiler, making sure top pan does not touch simmering water. Remove just before fully melted and stir until smooth. Set aside to cool slightly.
- In a mixing bowl, beat egg whites and sugar with an electric beater until stiff peaks form. Set aside.
- In a chilled mixing bowl, whip cream and mascarpone with an electric beater until smooth.
- Gently fold chocolate mixture into stiff egg whites until blended. Then, gently fold in whipped-cream mixture. Divide mixture and pour each half into prepared loaf pans. Freeze for at least an hour.
- Meanwhile, make peppermint layer. In a chilled mixing bowl, whip cream until stiff peaks form. Fold in ½ cup (125 ml) crushed candy cane. Cover and chill until ready to use.
- Prepare an ice water bath by placing a medium-sized bowl into a larger bowl with ice and water. Set aside. In a double broiler, whisk egg yolks and 3 tbsp (45 ml) sugar until thick and foamy, about 5 to 7 minutes. Make sure top pan is not touching simmering water. While beating slowly, add the mint liqueur or peppermint extract. Then whisk vigorously for another 2 to 3 minutes. Transfer mixture to bowl over ice bath and whisk until cool.
- In another mixing bowl, whisk egg white and remaining sugar until sugar is dissolved and mixture is warm to the touch, about 2 to 3 minutes. Then beat with electric beater until stiff and glossy peaks form.
- Gently fold egg-white mixture into egg-yolk mixture a third at a time. Fold in whipped-cream mixture. Divide and spoon mixture on top of the frozen Dark Chocolate Semifreddo. Cover with plastic wrap and freeze until firm, at least 4 to 5 hours.
- Remove Candy Cane and Dark Chocolate Semifreddo from freezer and set aside for 5 minutes to soften slightly. Turn onto a board and remove plastic wrap. Garnish with crushed candy canes. Cut into slices, place on chilled serving plates and serve.
