Warm Mushroom Salad with Cauliflower & Barley

Ingredients

Serves 4-6
4 to 5 cups (1 L to 1.25 L) small cauliflower florets (about 1 small head cauliflower)
3 tbsp (45 ml) olive oil, divided
salt and pepper, to taste
4 cups (1 L) chopped cremini mushrooms
2 garlic cloves, minced
1 tbsp (15 ml) butter
1 tbsp (15 ml) soy sauce
2 cups (500 ml) cooked barley
1 lemon, juice only
1 cup (250 ml) chopped parsley leaves
½ cup (125 ml) toasted pine nuts
1 cup (250 ml) shaved Parmesan

Instructions

  1. Preheat oven to 400 F (200 C) and line a baking sheet with parchment paper. In a large bowl, coat cauliflower with 1 tbsp (15 ml) olive oil and season with salt and pepper to taste. Transfer to lined baking sheet and roast for 15 minutes. Flip and cook for another 5 to 8 minutes, or until golden brown. Remove from oven and transfer to a large bowl.
  2. Heat 1 tbsp (15 ml) oil in a large skillet over medium-high heat. Add mushrooms and cook for 3 minutes, until just soft. Add garlic, butter and soy sauce and sauté for another 5 to 8 minutes, until cooked through and browned. Remove from heat and transfer to bowl with cauliflower.
  3. Add barley to bowl with cauliflower and mushrooms. Add remaining 1 tbsp (15 ml) olive oil, and season with lemon juice, salt and pepper to taste. Add parsley, pine nuts and Parmesan and mix to combine. Serve at room temperature.

Maple Squash Salad with Pecans, Pomegranate & Blue Cheese

Ingredients

Serves 4
1 medium acorn squash
2 garlic cloves, minced
2 tsp (10 ml) ground cumin
2 tsp (10 ml) paprika
1 tsp (5 ml) ground cinnamon
2 tbsp (30 ml) olive oil
2 tbsp (30 ml) maple syrup, divided
salt and pepper, to taste
½ tbsp (7.5 ml) butter
½ cup (125 ml) raw whole pecans
¼ cup (60 ml) pomegranate seeds
¼ cup (60 ml) crumbled blue cheese
¼ cup (60 ml) cilantro leaves

Instructions

  1. Preheat oven to 400 F (200 C) and line a baking sheet with parchment paper. Slice squash in half and scoop out the seeds. With flat side on cutting board, cut squash into ½-in (1.25 cm) half-moons (skin is edible and can be left on). Transfer to a large bowl.
  2. In a small bowl, mix together garlic, cumin, paprika, cinnamon, oil and 1½ tbsp (22 ml) maple syrup. Pour over squash and gently massage to ensure squash is thoroughly covered in seasoning. Transfer to lined baking sheet, spacing apart evenly, and season with salt and pepper. Bake for 15 minutes, then flip and bake for another 10 minutes, or until fork-tender.
  3. In a small skillet over medium heat, melt butter and add remaining ½ tbsp (7.5 ml) maple syrup. Add pecans and cook for 5 minutes, stirring occasionally until coated in maple butter and lightly toasted. Remove from heat and set aside to cool.
  4. Arrange squash on a large platter and top with pecans, pomegranate seeds, crumbled blue cheese and cilantro. Serve warm.

Roasted Beets with Whipped Feta, Hazelnuts & Mint

Ingredients

Serves 4
8 medium beets, mix of yellow and red
3 tbsp (45 ml) olive oil, divided
salt and pepper, to taste
1 cup (250 ml) crumbled feta, room temperature
¼ cup (60 ml) cream cheese, room temperature
½ lemon, zest and juice
1 tsp (5 ml) honey
¼ cup (60 ml) toasted hazelnuts
¼ cup (60 ml) mint leaves

Instructions

  1. Preheat oven to 350 F (180 C). Tightly wrap all the beets together in foil with 1 tbsp (15 ml) olive oil and salt and pepper. Transfer to oven and bake for 45 minutes to 1 hour, or until fork-tender.
  2. In a high-speed blender or food processor, combine feta, cream cheese, 1 tbsp (15 ml) olive oil, lemon zest and juice and honey. Whip on high until mixture is smooth.
  3. Remove beets from oven and let cool until cool enough to handle. Peel beets and slice into ¼-in (0.5 cm) rounds. Spread whipped feta onto a serving plate and lay beets on top. Top with remaining 1 tbsp (15 ml) olive oil, hazelnuts and fresh mint.

Ingredients

Serves 2
2 chicken breasts, boneless, skin-on*
salt and pepper, to taste
½ tsp (2.5 ml) paprika
½ tsp (2.5 ml) garlic powder
½ tsp (2.5 ml) onion powder
2 tbsp (30 ml) olive oil, divided
¼ cup (60 ml) buttermilk
¼ cup (60 ml) mayonnaise
1 tsp (5 ml) red wine vinegar
1 small shallot, diced
1 garlic clove, minced
2 tbsp (30 ml) chopped chives
5 oz (140 g) baby kale
1 small head radicchio, thinly sliced
¼ cup (60 ml) thinly sliced red onion
¼ cup (60 ml) dried cranberries
¼ cup (60 ml) toasted bread crumbs

Instructions

  1. Preheat oven to 350 F (180 C) and line a baking sheet with parchment paper. Place chicken skin side up on lined baking sheet. Season with salt, pepper, paprika, garlic powder and onion powder. Drizzle with 1 tbsp (15 ml) olive oil and bake for 15 minutes, or until a meat thermometer inserted into thickest part of chicken reads 165 F (74 C). Remove from oven and set aside to rest.
  2. In a small bowl, mix together buttermilk, mayonnaise, vinegar, shallot, garlic and chives. Season with salt and pepper.
  3. In a large bowl, toss together kale and radicchio. Add remaining 1 tbsp (15 ml) olive oil and gently massage into leaves to break down the fibers. Add buttermilk dressing to taste and toss to coat. Any leftover dressing will keep in an airtight container in refrigerator for up to 1 week. Add red onion, cranberries and bread crumbs. Slice chicken and serve alongside salad.

Warm Mixed Mushroom Salad with Hazelnuts & Pecorino

Ingredients

Serves 4 - 6
2 tbsp (30 ml) finely minced shallot
3 tbsp (45 ml) sherry vinegar
sea salt and freshly ground black pepper, to taste
9 tbsp (135 ml) olive oil, divided
1 lb (500 g) assorted mushrooms, such as chanterelle, oyster and cremini, cleaned and roughly chopped into 1½-in (3.75 cm) pieces, divided
2 tbsp (30 ml) unsalted butter, divided
2 tsp (10 ml) fresh thyme leaves, divided
¼ cup (60 ml) thinly sliced shallot
6 large handfuls mixed greens, such as radicchio, spinach and/or frisée, washed, dried and chilled
½ cup (125 ml) packed flat leaf parsley leaves, finely chopped
3 tbsp (45 ml) thinly sliced chives
¼ lb (125 g) block Pecorino Romano or Parmesan Reggiano
½ cup (125 ml) toasted hazelnuts, coarsely chopped

Instructions

  1. In a small bowl, mix together shallot, vinegar and a couple large pinches of salt and pepper to make vinaigrette. Let sit for 10 to 15 minutes, then whisk in 5 tbsp (75 ml) olive oil and set aside.
  2. Heat a large heavy-bottomed sauté pan over high heat for about 2 minutes, or until very hot. Add 2 tbsp (30 ml) olive oil and 1 tbsp (15 ml) butter to pan. When butter foams, scatter half the mushrooms into pan. Season with 1 tsp (5 ml) thyme and a generous amount of salt and pepper. Sauté for about 5 minutes, stirring occasionally, adjusting heat from high to medium as necessary. Mushrooms should be tender and a little crispy. Transfer cooked mushrooms to a plate and repeat with remaining oil, butter, mushrooms and thyme. When second batch is done, add first batch back to pan. Cook for 1 to 2 more minutes to heat thoroughly, then toss in sliced shallots and cook, stirring, for about 2 more minutes.
  3. Meanwhile, in a large bowl, combine mixed greens, parsley and chives. Spoon hot mushrooms over salad. Return pan to stove over medium heat and add ¾ of vinaigrette, swirling and scraping up any bits that may remain from mushrooms, about 1 to 2 minutes. Reserve remaining ¼ of vinaigrette for final seasoning as needed. When vinaigrette is hot, immediately pour it over salad and toss to coat leaves and mushrooms. Season with salt, pepper and any remaining vinaigrette to taste, if needed.
  4. To serve, arrange salad on a large platter. Using a vegetable peeler, shave Pecorino or Parmesan over salad and top with hazelnuts. Serve warm.

Apple & Radicchio Salad with Goat's Cheese Truffles

Ingredients

Serves 4-6
CHEESE TRUFFLES
¾ cup (175 ml) soft goat’s cheese
½ cup (125 ml) mascarpone
1 tbsp (15 ml) finely minced fresh thyme leaves
1 tbsp (15 ml) finely sliced fresh chives
1 large pinch each sea salt and freshly ground black pepper
¾ cup (175 ml) finely chopped toasted pecans
¼ cup (60 ml) finely chopped Italian parsley leaves
VINAIGRETTE
2 tbsp (30 ml) honey
1 tbsp (15 ml) finely minced shallot
2 tsp (10 ml) Dijon mustard
2 tbsp (30 ml) white wine or apple cider vinegar
sea salt and freshly ground black pepper, to taste
⅓ cup (75 ml) olive oil
SALAD
inner leaves of 1 large head radicchio, torn in half if large, washed, dried and chilled
1 large handful arugula
1 red apple (such as Pink Lady), quartered, cored and thinly sliced
½ cup (125 ml) toasted pecans
⅓ cup (75 ml) dried tart cherries

Instructions

  1. To make Cheese Truffles, in a medium bowl, combine goat’s cheese, mascarpone, thyme, chives, salt and pepper. Using a fork, mix until smooth and lightened in texture. Line a small baking sheet with parchment paper.
  2. In another medium bowl, combine pecans and parsley. Using a spoon, scoop 1 scant tablespoon (just under 15 ml) of cheese mixture, roll it into a ball and place on lined baking sheet. Repeat with remaining cheese. Roll each truffle in chopped pecans and parsley, tossing to coat well and pressing mixture lightly into truffles to adhere. Place back on lined sheet and refrigerate until ready to serve.
  3. To make Vinaigrette, in a small bowl, combine honey, shallot, mustard, vinegar, salt and pepper. Whisk to combine, drizzle in oil and continue whisking until smooth.
  4. To assemble Salad, place radicchio, arugula and apple into a serving bowl. Drizzle with a few tablespoons of Vinaigrette, toss to coat, and season with salt and pepper, adding more Vinaigrette if desired. Transfer to a serving platter and scatter Cheese Truffles, pecans and cherries over top.
  5. To serve, lightly drizzle a little of remaining Vinaigrette over salad. Serve immediately, with extra Vinaigrette on side.

2 large garlic cloves, finely grated
1 tsp (5 ml) sea salt
2 lbs (907 g) assorted small colourful cherry tomatoes, halved
3 cups (750 ml) coarsely chopped Campari tomatoes
3 tbsp (45 ml) freshly squeezed lemon juice
2 tsp (10 ml) lemon zest
3 tbsp (45 ml) balsamic vinegar
⅓ cup (75 ml) olive oil
1 tsp (5 ml) freshly ground black pepper
¼ cup (60 ml) finely chopped Italian parsley leaves
2 tsp (10 ml) minced fresh thyme leaves
1 tbsp (15 ml) finely minced jalapeño pepper
1 tbsp (15 ml) finely minced shallot
3 tbsp (45 ml) capers, well rinsed
1 cup (250 ml) coarsely chopped fresh basil leaves
1 x ½ lb (227 g) ball Fior di Latte mozzarella, torn into small pieces
1 lb (454 g) dried angel hair or capellini pasta

Instructions

  1. On a cutting board, using a large heavy knife, mash garlic and salt into a paste, then transfer to a large serving bowl. Add cherry tomatoes, Campari tomatoes, lemon juice and zest, vinegar, oil, pepper, parsley, thyme, jalapeño, shallot, capers, basil and Fior di Latte. Mix well to combine and let sit, loosely covered, for about 1 hour to allow flavors to blend.
  2. When ready to serve, bring a large pot of salted water to a boil. Cook pasta until al dente, about 2 minutes. Drain pasta and immediately add it to tomato mixture, tossing to combine. Serve warm.

Trout Niçoise Salad

Ingredients

Serves 2
½ tsp (2.5 ml) salt, plus extra to taste
2 eggs
½ small beet, raw, sliced
2 tbsp (30 ml) white vinegar
10 small new potatoes, washed, unpeeled
1 bunch asparagus, trimmed
2 tbsp (30 ml) olive oil
2 x 4 oz (125 g) trout fillets
black pepper, to taste
1 head butter lettuce
1 cup (250 ml) halved cherry tomatoes
¼ cup (60 ml) pitted Kalamata olives
½ lemon, cut into wedges, to serve
Dill Dressing, ingredients follow below
1 garlic clove, minced
2 tbsp (30 ml) mayonnaise
1 tbsp (15 ml) grainy mustard
1 tbsp (15 ml) apple cider vinegar
1 tbsp (15 ml) diced dill pickles or cornichons
1 tbsp (15 ml) chopped capers
1 tbsp (15 ml) chopped dill
salt and pepper, to taste
1 tsp (5 ml) water, plus extra as needed (optional)

Instructions

  1. In a large pot over high heat, bring 8 cups (2 L) water to a boil. Add ½ tsp (2.5 ml) salt. Gently add eggs and boil for 7 minutes.
  2. Meanwhile, prepare an ice bath with just enough water to cover eggs and add beet slices and vinegar. Remove eggs from boiling water (reserve water for step 3) and run under cold water until cool enough to handle. Then peel under cold running water and place in beet and vinegar ice bath for at least 1 hour. For extra vibrant colour, transfer to refrigerator and allow to sit in bath overnight.
  3. In same boiling water, cook potatoes until fork-tender, about 12 to 15 minutes, depending on size. Remove potatoes (again reserving water for step 4) and run under cold water to stop cooking.
  4. Prepare another ice bath. In same boiling water, blanch asparagus for 2 to 5 minutes or until al dente, then drain and place in ice bath.
  5. Preheat oven to 350 F (180 C).
  6. In a large cast iron or ovenproof pan, heat oil over medium-high heat. Season trout with salt and pepper and place in pan, flesh-side down. Sear for 4 to 5 minutes, or until golden brown and crispy. Flip trout and transfer pan to oven for 6 to 8 minutes, or until trout is just opaque (timing will vary depending on thickness of fish).
  7. To assemble, remove eggs from ice bath and cut in half lengthwise. Drain asparagus and pat dry. Tear lettuce leaves and lay on a serving platter. Layer potatoes, asparagus, tomatoes, eggs and olives over lettuce. Place trout on top and drizzle with Dill Dressing. Serve with lemon wedges.
  8. For Dill dressing, In a medium bowl, combine garlic, mayonnaise, mustard, vinegar, pickles, capers and dill. Season with salt and pepper. If needed, to thin out dressing, add water, 1 tsp (5 ml) at a time, until desired consistency is achieved. Makes about ½ cup (125 ml)

½ cup (125 ml) farro
½ cup (125 ml) wild rice
½ cup (125 ml) red quinoa
½ cup (125 ml) pearl barley
1 cup (250 ml) thinly sliced radishes
¼ small red onion, thinly sliced
¼ cup (60 ml) extra-virgin olive oil
¼ cup (60 ml) sherry vinegar
1 tbsp (15 ml) Dijon mustard
1½ cups (375 ml) baby arugula leaves
1 cup (250 ml) flat leaf parsley leaves
½ cup (125 ml) fresh mint leaves
½ cup (125 ml) toasted pecans
kosher salt, to taste
½ cup (125 ml) raw or toasted pumpkin seeds
½ cup (125 ml) dried mulberries or yellow raisins

Instructions

  1. Cook grains individually according to package directions. Drain and set aside, allowing grains to cool to room temperature.
  2. Meanwhile, place radish and red onion in separate bowls of ice water and set aside. Allow both sit for at least 10 minutes.
  3. In a medium bowl, whisk together olive oil, vinegar and mustard. Set dressing aside.
  4. Drain radish and red onion and place in a large bowl. Add cooked grains, arugula, parsley, mint and pecans. Toss to combine, then drizzle with dressing. Toss well and season to taste with salt. Add pumpkin seeds and mulberries. Toss well and serve.

FENNEL, APPLE AND HAZELNUT SALAD WITH WHISKEY MAPLE VINAIGRETTE

Ingredients

Serves 4
¼ cup (60 ml) very finely chopped toasted hazelnuts
1 tsp (5 ml) dried fennel seeds, crushed or finely chopped
3 tbsp (45 ml) bourbon whiskey
1½ tbsp (22 ml) apple cider vinegar
1 tbsp (15 ml) red wine vinegar
1½ tbsp (22 ml) maple syrup
1 tbsp (15 ml) fresh lemon juice
2 tsp (10 ml) Dijon mustard
¼ cup (60 ml) light olive oil
sea salt and black pepper, to taste
2 small fennel bulbs, tough outer layer and stems removed, very thinly sliced
2 small ambrosia apples, very thinly sliced
¼ cup (60 ml) very thinly sliced red onion
2 tbsp (30 ml) finely chopped flat leaf parsley leaves
2 cups (500 ml) hearty mixed fall greens, such as kale, chard and chicory, torn into small pieces
ƒ cup (75 ml) whole or halved toasted hazelnuts

Instructions

  1. In a medium jar with a tight-fitting lid, combine finely chopped hazelnuts, fennel seeds, bourbon, vinegars, maple syrup, lemon juice and Dijon. Seal and shake well to mix. Add olive oil and salt and pepper to taste. Seal and shake until well combined. Taste, adjust seasoning if necessary and set aside.
  2. In a medium salad bowl, combine fennel, apple, red onion, parsley and greens. Drizzle with enough vinaigrette to coat and toss to combine. Season to taste with salt and pepper. Top with hazelnuts and serve with remaining vinaigrette on the side.
